摘要
为充分研究家育“猛香系”杜×长×大三元猪的屠宰性能及肉品质,对其进行屠宰实验及品质检验。选择30头同一饲养环境、管理条件的体重约为115 kg三元猪进行屠宰测定,分析其屠宰性能、胴体性状以及肉品品质。结果表明:胴体指标分析得出,胴体均重为85.25 kg,屠宰率为70.25%,胴体长为97.45 cm,背膘厚为23.59 mm,皮厚为2.66 mm,眼肌面积为49.31 cm^(2),腿臀比例为33.19%;肉质指标分析得出,肌肉色值L_(24)42.93,pH_(1)值6.37,pH_(24)值为5.76,48 h滴水损失2.53%,系水力92.58%。实验为进一步提高和改善三元猪的胴体品质和优质选育育种方案提供参考的数据支撑。
In order to study the slaughtering performance and meat quality characteristics of Jiayu company's“Mengxiang series”three-way pigs(Duroc×Landrace×Large),slaughter determination and meat quality detection were carried out.30 ternary pigs(Duroc×Landrace×Large) with body weight of about 115 kg were selected under the same feeding environment and management conditions for slaughter determination,analysed slaughter performance,carcass character and meat colour quality.The results show that:Carcass index analysis showed that the average carcass weight was 85.25 kg,the slaughter rate was 70.25%,the carcass length was 97.45 cm,the backfat thickness was 23.59 mm,the skin thickness was 2.66 mm,and the eye muscle area was 49.31 cm~2.Leg-hip ratio was 33.19%.Meat quality index analysis showed that muscle color value was L_(24) 42.93±2.25,pH_(1) value was 6.37,pH_(24) value was 5.76,48 h drip loss was 2.53%,hydraulic was 92.58%.This experiment provides reference data support for further improving the carcass quality and quality selection and breeding program of ternary pigs.
