摘要
随着人类对海洋资源需求的不断增加,海洋资源的研究与开发受到广泛关注。与传统禽畜源胶原蛋白相比,海洋源活性胶原具有生物资源丰富、致敏性低、抗氧化性强、安全性高、不受宗教信仰限制等优势。该文对近年来国内外不同种类海洋动物活性胶原提取的相关研究进行综述,并介绍其在食品和医学等领域的应用研究进展,旨在为海洋源活性胶原的开发和利用提供参考。
With the continuously increasing human demand for marine resources,the research and development of marine-derived resources have garnered extensive attention.In comparison to collagen derived from livestock and poultry,active collagen sourced from marine animals possesses several advantages,including rich biological resources,low allergenicity,strong antioxidant properties,high safety,and no religious restrictions.This review summarized recent domestic and foreign research on the extraction of active collagen from various marine animals and introduces its research progress in the fields of food and medicine The aim was to provide a reference for the development and utilization of marine-derived active collagen.
