摘要
反刍动物奶源一直是全世界生产和消费的主要奶源。但随着功能性食品的推广,人们开始将注意力转移到小众奶制品上。马奶成分与人乳相似且具有独特的保健作用及低致敏性,因此得到了广泛的关注。马奶需求量的增加,也使得乳用马成为研究热点。文章从组织器官到分子育种系统概括了马的乳房结构、泌乳规律、乳成分及特点及影响奶产量的因素、泌乳的分子调控机制,以期为乳用马相关理论与实践研究提供参考。
Ruminant milk has been the main source of milk produced and consumed world⁃wide.But with the promotion of functional foods,people began to shift their attention to niche dairy products.The composition of mare's milk is simi⁃lar to that of human milk and has unique healthcare effects and is hypoallergenic,so it has re⁃ceived widespread attention.The increase in de mand for mare milk has also made dairy horses a research hotspot.This paper systematically summarized the contents from tissues and organs to molecular breeding,including the structure of horse udders,lacta⁃tion rules,mare milk components and characteristics,factors affecting milk production and the molecular regulatory mechanism of lactation.It was hoped to provide a reference for theoretical and practical re⁃search ondairy horses.
