学科前沿视角下“现代食品科学技术”教学与实践

Construction and Implementation of“Modern Food Science and Technology”from the Perspective of Disciplinary Frontiers

摘要 “现代食品科学技术”是食品科学与工程类专业核心课。将学科前沿和课程思政有机融入课程,使知识传授、能力培养和价值引领融为一体,是落实科教兴国、立德树人目标的根本任务和重要举措。依据课程特点,以课程的“食品加工”一节作为教学设计案例,充分挖掘相关学科前沿和思政元素。以“熵减”“牙齿”“饮食”等视角,深入介绍食品加工的发展和进化演变,以期为“现代食品科学技术”课程的学科前沿和课程思政融入提供经验和借鉴。实践证明,学科前沿引导的课程思政教学人才培养机制实施效果明显,解决了课程教学创新不足的缺陷,促进了学生创新能力和科研思维的培养。 “Modern Food Science and Technology”is the core course of food science and engineering.Organic integration of discipline frontiers and curriculum ideological and political into this course can achieve knowledge transfer,ability training and value leadership together.This is the fundamental task and important initiative to implement the goal of science and education,moral education.According to the characteristics of the course,taking the“Food Processing”section of the course as a teaching design case,fully explore the relevant disciplinary frontiers and the elements of ideology and politics.From the perspectives of“entropy reduction”,“teeth”and“diet”,the evolution and development of food processing are introduced in depth,to provide experience and reference for the disciplinary frontiers of“Modern Food Science and Technology”courses and the integration of curriculum ideology and politics.The effectiveness of the implementation of the talent training mechanism for teaching civics and politics in the curriculum guided by the frontiers of academic disciplines has been obvious.It has solved the shortcomings of insufficient innovation in curriculum teaching and promoted the cultivation of students’innovative ability and scientific research thinking.
