摘要
随着消费者对蔬菜口感的要求愈来愈高,同时蔬菜栽培也处于由产量型向质量型转变的时期,因此加强对蔬菜口感的影响因素和改进方法的研究势在必行。本文对影响蔬菜口感的一些因素进行了综述,并在实际生产的基础上,对蔬菜口感的改进方法进行分析和总结,其中涉及到蔬菜的生产、贮藏、流通和消费等环节,重点从生产环节进行了论述。
As the consumers' need towards the vegetable flavor is becoming higher and higher and vegetable cultivation is in the transitional period from quantity mode to quality mode,consequently,it is imperative to do further research on the influencing factors and improving methods for vegetable flavor.This article reviewed the influencing factors of the vegetable flavor,and it also analyzed and summarized the improving methods of vegetable flavor based on our practical production experience in many years.It was involved the production,storage,circulation and consumption of the vegetables,with special concern on the production part.
