摘要
为了探讨预测面筋质量的方法,以40个小麦品种(系)为材料,研究了其籽粒品质、HMW-GS组成与面筋含量、面筋指数的相关性。结果表明,小麦籽粒硬度、容重与面筋指数,蛋白质含量与湿、干面筋含量、面筋指数均呈显著或极显著的正相关(r=0.3708~0.5791);千粒重与面筋指数呈显著负相关(r=-0.3306);角质率与面筋指数虽有一定的正相关,但相关不显著;籽粒硬度、角质率、千粒重和容重与湿(干)面筋含量没有明显的相关。含有5+10、14+15亚基的品种一般具有较好的面筋质量(但这并不是绝对的)。因此,可利用小麦籽粒硬度、容重、蛋白质含量和千粒重来预测面筋质量的优劣。
The correlation of gluten quality with grain quality and HMWGS component in 40 wheat varieties (lines) were studied in order to reveal the methods of forecasting gluten quality. The results indicated that grain hardness and test weight with gluten index, protein content with wet (dry ) gluten content and gluten index had significant positive correlation (r=0.3708~0.5791); 1000kernel weight with gluten index had significant negtive correlation (r=-0.3306); The correlation of vitreous percentage with gluten index were positive, but not significant; Grain hardness, test weight, 1000kernel weight with wet (dry) gluten content had not significant correlations. The varieties which have 5+10, 14+15 HMWGS have better gluten quality, but this was not always. Therefore, hardness, test weight, protein content and 1000kernel weight can be used for forecasting the wheat gluten quality.
