本文根据目前绿豆市场的实际情况及存在问题,结合绿豆自身特性优势,着重论述绿豆改性淀粉开发,绿豆蛋白利用及绿豆膳食纤维生产加工等方面工艺流程、操作要点、工艺参数等情况,对绿豆综合开发和利用具有一定指导意义。
According to mung bean market condition and some difficulties in trading, this essay emphasizes on processing progress, processing key point and processing parameter of the development of denaturation starch, the utilization of mung bean protein and the processing of mung bean dietary fibre. All these technical data are aquired from practice and theory which based on the priority of mung bean.
