摘要
以新鲜豆渣为原料,运用现代生物技术与传统化学法相结合手段,采用分离提取、超微粉碎等新技术,制备豆渣膳食纤维的咀嚼片。该方法技术先进、工艺路线合理,膳食纤维得率由化学法的30.17%提高到45.66%,咀嚼片中膳食纤维含量达到24%~28%。
Using fresh bean dregs as raw materials,combining the method of the advanced biological technology along with the traditional chemical method, the new techniques such as separation, abstraction and ultrafine pulverizing are employed to produce chewing flakes of dietary fibre. The yield of the dietary fibre has increased from 30.17% to 45.66% compared with the chemical method, and the content of the dietary fibre in the chewing flakes reached 24%~28%.
