摘要
通过对3年沉缸酒、5年沉缸酒和15年沉缸酒的总多酚物质等生理活性物质进行分析和测定,利用DPPH法进行抗氧化活性的分析,得出贮存时间越长,多酚物质增加,自由基清除能力增强,所以陈年沉缸酒可以增强抗氧化、延年益寿等保健功能。
The total polyphenols and other physiological active substances in 3 years catalyzed wine, 5 years catalyzed wine and 15 years catalyzed wine are analyzed and compared, DPPH method is used to analysis antioxidant activity, The result shows that with storage time longer, polyphenol substance increases, and the free radical scavenging ability enhanced, so the old catalyzed wine may enhance antioxidant, prolonging life and other health care function.
