窖泥理化指标与微生物含量相关性研究 被引量:8

摘要 窖泥是生产浓香型白酒的基础,窖泥质量的优劣对浓香型白酒的质量起着至关重要的作用。本研究利用q PCR技术对浓香型白酒窖泥微生物含量进行测定,同时结合常规理化指标进行相关性分析。结果表明,pH与窖泥细菌含量呈正相关(P<0.01),腐殖质含量与窖泥细菌含量呈负相关(P<0.05),说明窖泥pH和腐殖质含量可作为衡量微生物含量的理化指标。 it mud is the basis of producing Nongxiang Baijiu(Liquor), and the quality of pit mud plays a key role in Nongxiang Baijiu(Liquor)production. In this study, we determined the microbial content of pit mud by qPCR, and the correlation analysis was carried out according to the physical and chemical indexes of pit mud. The results showed that pH was positively correlated with the bacterial content of pit mud, and humic content was negatively correlated with the bacterial content of pit mud. It means that pH and humus can be used to measure the microbial content in pit mud.
