摘要
本文介绍了甲壳素/壳聚糖的生产工艺,即用虾、蟹壳为原料,经脱钙、脱蛋白质、脱乙酰基后,得到脱乙酰度≥90%、粘度为中高粘度的壳聚糖产品,并研究了甲壳素/壳聚糖在食品工业中的应用。
This article introducts the production of chitin/chitosan, with the materials of the shell of shrimps and crabs after the decalcification, deproteinization, deacetylation. The chitosan in the product is at least 90% with a medium or high glue. The Paper also discusses the applications in food industy.
