摘要
采用特殊的脱苦方法,既使苦杏仁脱苦,又可得到具有药用价值的苦杏仁甙。以苦杏仁为原料,通过对杏仁浆的不同配比、不同稳定剂、杀菌条件的研究,确定了较经济简便的杏仁乳生产工艺、工艺参数,杏仁乳的最佳配方,并得到了具有良好香味、口感和稳定性的产品。
A special method was propesed to detoxify bitter almond and to get amyglin with medicinal effect .Using bitter almond as main raw material a simpler and more economical processing technology of almond milk, technology parameters and optimum formulation were determined by improving the ratio of almond to water, different stabilizers and sterilizing condtion, and a better fragrant, flavor and stable product was obtained.
