摘要
主要介绍猕猴桃的6种功能成份,即维生素、膳食纤维、微量元素、多糖、黄酮、多酚的研究近况,及猕猴桃在果实贮藏、加工工艺、保健药用方面的开发利用,为今后猕猴桃的进一步开发与研究提供帮助。
Kiwifruit is known as the 'king of fruits', is rich in nutrients and functional that with good prospects for the development and utilization. This paper describes six functional ingredients in kiwifruit, that recent research of vitamins, dietary fiber, trace elements, polysaccharides, flavonoids,polyphenols. And development of storage, processing, health medicinal aspects, hoping provide help for the future kiwi further development and research.
