Monitoring Variation of Volatile Components in Semen Armeniacae Amarum Under Accelerated Damage Conditions by GC-IMS Technology

摘要 【目的】建立以气相离子迁移色谱(GC-IMS)监测高温高湿加速破坏模拟条件下苦杏仁贮存过程中挥发性物质变化的方法。【方法】在温度35℃、湿度80%的条件下将苦杏仁样品分别放置3、4 d,采用GC-IMS监测其挥发性物质成分。【结果】鉴定并检测了醇、酯、酸、醛、酮、烃、含氮化合物7大类共29种挥发性物质。在高湿高温条件下,随着放置时间的延长,苦杏仁样品的挥发性物质成分中醇类、酮类物质总体含量呈现升高的趋势,酸类、酯类、烃类物质总体含量呈现下降的趋势,苯甲醛含量一直很高,糠醛、乙酸乙酯和麦芽醇含量均呈现下降趋势,4 d时检出丙酮含量增加了7.2倍。【结论】根据挥发性物质的变化建立了一种快速简便的苦杏仁贮存质量评价新方法。 Objective To establish a method for monitoring the variation of volatile components in Semen Armeniacae Amarum stored under accelerated damage conditions simulated by high temperature and high humidity by gas chromatography-ion mobility spectrometry(GC-IMS).Methods Under the conditions of temperature 35℃and humidity 80%,the Semen Armeniacae Amarum samples were respectively stored for 3,4 d,and then the volatile components were monitored by GC-IMS.Results A total of 29 kinds of volatile components classified into 7 categories including alcohol,ester,acid,aldehyde,ketone,hydrocarbon and nitrogen-containing compounds were tested and determined qualitatively.Under the condition of high humidity and high temperature,the total contents of alcohol and ketone in volatile components of Semen Armeniacae Amarum showed an increasing trend with the prolongation of storage time,the contents of acid,ester and hydrocarbon showed a decreasing trend,the content of benzaldehyde was always significantly high,and the contents of furfural,ethyl acetate and maltol all showed a decreasing trend.Acetone content was increased by 7.2 times at storage day 4.Conclusion With reference to the variation of volatile components,a new,quick and convenient method has seen established for the quality evaluation of Semen Armeniacae Amarum storage.
