Application of New and High Technique in Chinese Food Industry

摘要 近年来,我国食品工业有了很大发展,其中高新技术的开发应用在其发展中占有十分重要的地位。近二十多年来,许多新技术已被研究者们研究并应用到农产品加工中。本文以膜分离技术、冷冻技术、远红外技术、超临界萃取技术和无菌包装技术为代表,介绍高新技术在我国食品工业中的研究和应用情况及发展趋势。 In recent years, the Chinese food industry has been greatly developed. The exploitation and application of high and new technique have played an important role in this development. A number of new techniques have been studied and appli-cated in processing of agricultural prcxlucts by different researchers over the past two decades. This paper presents an overview of many new techniques and methods which were based on membrane separation, freezing, far-infrared, supercritical fluid extraction and aseptic packaging. These techniques and methods have improved and developed the agricultural product processing, in our country.
