摘要 植物油的酶法脱胶是完全有希望取代化学脱胶的一种新方法。利用新型磷脂酶LecitaseUltra进行了大豆油脱胶的研究 ,确定了该酶较优的反应条件 :加酶量 2 0mg/kg ,pH5 .0 ,温度 4 8℃ ,加水量 2 % ,大豆油含磷量能降到 5mg/kg以下。研究认为 。 Enzymatic degumming,expected to a absolute substitute for chemical degumming,is a novel technique of vegetable oils degumming.Soybean oil degumming by a novel phospholipase Lecitase Ultra was studied for the first time.The optimum operation parameters of this enzyme were decided:the pH 5.0,the temperature 48℃,the enzyme dosage 20 mg/kg oil,the water content 2%.The residual phosphorus content decreases steadily to less than 5 mg/kg.Lecitase Ultra is a kind of more suitable phospholipase used to vegetable oils enzymatic degumming.
