摘要
对脐橙皮进行了色素提取和稳定性研究。结果表明:脐橙皮色素水溶性好,对光、热(40～100℃,2.5h)的耐受性强;当pH=2～6时,色素稳定性良好;色素对于Cu2+、Ca2+、Mn2+、Na+、Mg2+的作用不显著,但Fe+3对其影响较大;该色素对氧化剂(H2O2)的耐受能力较强,但对还原剂(Na2SO3)的耐受能力较差。
The extraction and properities of orange pigment from umbilicalike orange, which is a variant of sweet orange,were studied. The experimental results show that it has good light resistance at pH=2～6 ,heat resisting property at 40～100 ℃ for 2.5 hours, and it is soluble in water.The effect of Cu2+?Ca2+?Mn2+?Na+?Mg2+on the pigment is not remarkable.The pigment has better endurance capability against oxidizing agent (H2O2), but it has less resistance capability against reducing agent (Na2SO3).
