摘要
利用GMP的丙醇———双缩脲改良测定法 ,对我国冬麦区 12 4份有代表性的冬小麦品种和品系的谷蛋白聚合体进行了测定 ,系统探讨了谷蛋白聚合体与和面仪参数的关系。结果表明 :(1)我国小麦品种面粉谷蛋白大聚合体 (GMP)含量的分布范围在 1 70 %~ 6 6 0 %之间 ,平均含量为 3 87% ;GMP在面粉蛋白质中所占的比例 (GMP Pr)平均为 31 2 1% ;面粉可溶性谷蛋白 (SGP)含量平均为 1 75 % ,占面粉蛋白质的 14 32 % ;面粉GMP含量和GMP在总蛋白质中所占的比例以及SGP在总蛋白质中所占比例 (SGP Pr)的品种间变异均较大。 (2 )小麦面粉中谷蛋白大聚合体GMP含量和可溶性谷蛋白SGP含量对和面仪参数变异作用方向相反。GMP和GMP Pr含量对和面仪参数具有正向效应 ,而SGP和SGP Pr含量为负向效应。
124 common wheat cultivars and new lines from winter wheat production zones of China were analyzed by the improved 1-propanol/biuretium flour protein fractionation procedure to evaluate the amounts and distributions of different glutenin fractions and to determine the relationships between glutenin polymers and mixograph parameters The results showed that the range of GMP concentrations in flour among the genotypes was 1 70%-6 60% with mean value of 3 87%; the concentrations of GMP in flour protein ranged from 17 26% to 41 87% with mean value of 31 21%; the mean concentration of SGP in flour was 1 75% which accounted for 14 32% of flour protein; both GMP and SGP had an effect on processing quality, but acted in an opposite side GMP content in flour and in flour protein affected positively on mixograph parameters and SGP negatively
