2016-2017年河北省沧州市食品中食源性致病菌检测结果及分析 被引量:12

Detection and analysis of foodborne pathogens in foods of Hebei Cangzhou City during 2016-2017

摘要 目的了解食源性致病菌在沧州市食品中的检出情况,为食源性疾病的预防控制工作提供科学数据。方法依据《河北省食品微生物及其致病因子监测技术指南(2016)》、《河北省食品微生物及其致病因子监测技术指南(2017)》,对沧州市各县区的超市、农贸市场等场所随机抽样,并进行沙门氏菌、金黄色葡萄球菌、副溶血性弧菌等9种致病菌检测。结果 2016-2017年共检测773份食品样品,检出致病菌173株,总检出率22. 38%(173/773),2016年和2017年食品中食源性致病菌的总检出率差异有统计学意义(χ2=30. 007,P <0. 001)。结论沧州市食品中存在不同程度的食源性致病菌污染。其中水产及其制品、速冻面米生制品和学校周边儿童食品中的食源性致病菌检出率较高,相关部门需加强对这几类食品的监管,保证食品安全,有效预防食物中毒的发生。 Objective To detect foodborne pathogenic bacteria in food samples of Cangzhou City market,in order to provide scientific data for the prevention and control of foodborne disease. Methods The supermarkets,farmers’ markets and other places in the counties and districts of Cangzhou City were randomly sampled,and 9 pathogenic bacteria such as Salmonella,Staphylococcus aureus and Vibrio parahaemolyticus were detected,according to the'Guidelines for the Monitoring of Food Microorganisms and Pathogenic Factors in Hebei Province( 2016) 'and 'Guidelines for the Monitoring of Food Microorganisms and Their Pathogenic Factors in Hebei Province( 2017) '. Results A total of 773 foodsamples of 11 kinds in Cangzhou City during2016-2017 were collected and analyzed. Totally 173 strains of foodborne pathogens were found,and 22. 38%( 173/773) was positive. The detection rate of foodborne pathogens in 2016 and 2017 had statistically significant difference( χ2= 30. 007,P <0. 001). Conclusion There are different degrees of contamination of foodborne pathogens in Cangzhou City. The detection rate of food-borne pathogens in aquatic products and their products,quick-frozen rice products and children’s foods around schools is high. Relevant departments need to strengthen the supervision of these types of foods to ensure food safety and effectively prevent the occurrence of food poisoning.
