摘要
本文对水解玉米蛋白的酶进行了筛选,并研究了Alcalase 2.4L水解玉米蛋白时,pH、温度、玉米蛋白浓度及酶浓度对蛋白质转化率的影响,得到了试验范围内的最佳工艺条件。
The enzyme which hydrolyze the corn gluten meal remarkable was selected, the effects of pH, temperature , corn gluten meal concentration and enzyme concentration on protein conversion were studied. The optimum technique conditions were obtained in this test.
