摘要
以粪大肠杆菌为指示菌 ,试验比较了微波杀菌和传统加热杀菌的效果。试验结果表明 ,微波杀菌不仅杀菌速率快 ,而且杀菌效果明显优于加热杀菌。通过酶活性检测和透射电镜观察 ,探讨了微波杀菌的机理。同时 。
Escherichia coli are used as the indicator bacterium, then the effect of microwa ve sterilization and pasteurization is evaluated by the test. Comparing with pas teurization, microwave sterilization can sterilize fast and efficiently. The mec hanism is investigated by enzyme activity test and transmission electron microsc ope. The non thermal effect is proved existing in microwave sterilization.
