综述了竹笋贮藏保鲜期间出现的质量问题及其保鲜技术的研究进展,并提出竹笋保鲜的发展方向。
This paper summarized the quality problem of bamboo shoot during storage, preservation and the advances in research on the preservation technique of bamboo shoot, proposes some suggestions on postharvest treatment of bamboo shoot.
