辽西大枣减压贮藏及其生理生化的研究 被引量:11

摘要 以大平顶大枣、赞皇大枣、金丝小枣为试材,采用减压贮藏方法,在-1℃条件下,将金丝小枣和赞皇大枣的贮藏期延长至90天以上,将大平顶枣的贮藏期延长至60天以上,且保持较好的感官品质、新鲜度及85%以上的好果率。生理生化测定结果表明,减压能进一步减缓硬度、可溶性固形物、可滴定酸、VC及还原糖的变化速度,同时可抑制果胶酶、VC氧化酶活性,延缓果实衰老过程,延长贮藏期限,提高了保鲜效果。 The materials of dapingding zizyphus jujube, zanhuang Zizyphus jujube, jinsi the west of Liaoning. The storage time of zanhuang zizyphus jujube and jinsi zizyphus jujube are extended to 90 days, while the storage time of dapingding zizyphus jujube is extended to 60 days in -1 ℃. At the end of fresh-keeping period the jujube are still very fresh, and have high crisp fruit rate in hypobaric storage(more than 85%). The study showed,hypobaric storage can decrease the change speed of firmness, total soluble solid, intractable acid, ascorbic acid, total reductive sugar. Hypobaric storage can restrain fatherly the activities of ascorbic acid oxidize and polygalacturonase, delay the progress of senescence, enhance the storage life, and improve the effects of storage.
