棉粕饲料导致鸡蛋变色的机理探讨 被引量:2

摘要 本文对棉粕饲料诱导的鸡蛋变色机理进行了探讨。实验中通过对变色鸡蛋变色部分的分子筛分离,蛋黄蛋清中钙、铁元素分布变化的检测,以及蛋黄膜超微结构的观察等方法,从多方面对棉粕饲料诱导鸡蛋变色的机理进行了研究。结果表明,在鸡蛋变色过程中,棉酚与蛋白质结合,同时蛋黄膜的超微结构也发生显著变化,蛋黄中的钙、铁元素流失到蛋清中去。由此可见,棉粕饲料诱导的鸡蛋变色是化学、物理、生物学变化的综合现象。
