摘要 介绍了谷氨酰胺转胺酶的分类、生产方法及作用特点 ,并且系统地阐述了其在肉制品加工中的应用。 The classification,production,and functional properties of transglutaminase were discussed,and the application of Microbial Transglutaminase in processing meat products were systematically described.
