摘要 采用硫酸铵沉淀法制备小麦胚芽水溶性蛋白,通过单因素实验和正交实验,对其提取工艺进行优化。实验结果表明:pH8.0,提取时间8h,料水比1:8,温度25℃条件下,小麦胚芽水溶性蛋白质提取率最高。 Wheat germ water oluble proteins were obtained by ammiaonia sulfate precipitation method. Their extraction process was optimized by single factor and orthogonal experiments, and the results showed that the optimal extraction condition was pH 8.0, extraction time 8 h, the ratio between material and water 1:8 and temperature 25℃.
