摘要
目的 揭示不同健康教育方式对食品从业人员有关知识的知晓程度和有关卫生行为形成状况的影响 ,并试图找到最佳的预防食物中毒健康教育模式。方法 分别对 60 0名集体食堂厨师以教材授课法、声像材料法及综合教育法进行干预 ,比较分析不同方式的食物中毒预防控制效果 ,设置相同人数的平行对照组。结果 干预组人群卫生知识知晓率、认识态度正确率及卫生行为形成状况均有显著提高 ,以综合教育方式效果最为显著 ,而各对照组无显著差别。结论 提高有关知识知晓水平是改变不良行为的基础 ,3种干预方式均有作用 ,其中以综合教育方式效果最佳。
Objective To investigate the influence of different approaches of health education on the KAP about food poisoning among cooks. Methods 1200 cooks of collective canteen in Shenzhen,Guangdong Province,235 male and 365 female,aged 18~23,most with level of middle education,were randomly divided into 2 groups,one group receiving health education in different forms: lecture education,audio-visual material education,and comprehensive education,for 3 days,and one group used as a control group. Another 400 background-matched cooks were randomly divided into 2 groups,one group receiving health education in different forms: lecture education,audio-visual material education ,and comprehensive education,for 3 months and one group used as control. Before and after the research questionnaire survey was conducted to investigate the changes in KAP. Results The correct answer rates of different questions about food poisoning knowledge,in comparison with those among the controls,were significantly increased after health education (all P<0.01),among the cooks who received different forms of health education,especially among those receiving health education of comprehensive approach. The correct rates of healthy behavior about food poisoning,were significantly increased in comparison with those among the controls (all P<0.05),especially among those who received health education of comprehensive education. Conclusion Health education,especially comprehensive education,is effective on improvement of KAP about food poisoning.
