摘要
由美国制订的HACCP(HazardAnalysisandCriticalContorlPoint)食品监控体系最初目的是保证宇航员食品的绝对安全 ,经过三十多年的研究、发展 ,已被世界许多国际组织所认可 ,同时被美国、欧盟各国、加拿大、日本等数十个国家所采用 ,尤其是在水产品、肉类及果蔬汁加工业 ,已作为一项强制性标准 .在此 ,介绍了HACCP的发展简史、特点、原理、基本内容以及在我国的推行现状 ,最后提出我国在加入WTO后贯彻执行HACCP的几项建议 .
The original purpose of the HACCP food monitoring system laid down by the US was to insure the absolute food safety of the astronauts. After of research and development for 3 years, the system has been recognized by many international organization and used by up to ten countries, such as the U.S, the Uropean Union, Canada and Japan. It is a compulsory standand especially in the area of sea products and meat in manufactory industry. The article introduces the development, trait, principle and present application in China. Finally, the author puts forward some suggestions for China in implementing HACCP after it entered into the WTO.
