Investigation of the Acceptability of Cultured Meat in University Students

Background: Over the past 20 years, cultured meat has drawn a lot of public attention as a potential solution to issues with animal husbandry, including inadequate use of natural sources, improper animal welfare practices, and possible risks to public health and safety. The novel method of producing meat through culture reduces the need for animals to produce muscle fiber, thereby obviating the necessity for animal slaughter. Apart from its ethical advantages, cultured meat presents a possible way to fulfill the expanding need for food among growing populations. The purpose of this research was to find out whether Turkish students would be willing to pay for and accept cultured meat. Technique: Method: 371 university students who willingly consented to fill out a questionnaire and provide demographic data make up the research sample. Questions from previous studies on the acceptability of cultured meat were compiled to create the survey. The research’s data collection took place in March and April of 2022. The research was completed in June 2022 after the data had been processed and analyzed. Results: The results showed that the majority of participants were female and had omnivorous eating habits. Based on the results of the Bonferroni correction test, students with a higher intention to purchase and consume cultured meat were those who received economics and business education. Students with two years of university education had a higher overall survey score than those with four years of education (p < 0.05). Furthermore, it is discovered that there is a negative correlation between the participants’ ages and their Factor 2 (using cultured meat as an alternative to industrial meat) and Factor 3 (consuming and purchasing it) section points (r = -109, p = 0.036) (r = -0.121, p = 0.019). In conclusion, university students generally have a negative outlook on health-related issues, such as eating cultured meat as an alternative. 展开更多

The aim of this study was to purify β-glucan from oyster mushrooms (Pleurotus pulmonarius) by alkaline extraction. The extracted β-glucan was added to a cracker recipe and the sensory, physical and estimated glycemic index of the final product were evaluated. Optimum extraction parameters were determined to be 80˚C, 90 minutes and 30% KOH. The β-glucan crackers had a glycemic index ranging from 88.07 to 67.32, while glucose had a glycemic index of 100. Based on the sensory study, it can be concluded that crackers enriched with β-glucan and possessing functional qualities may meet consumer expectations. 展开更多

Plant tissue culture studies are one of the pretreatments carried out to increase crop yield by preventing germination in plant seeds. In this research, repeated plant tissue culture studies were conducted with sterilizers specific to safflower seed, which will increase production efficiency but do not cause genetic polymorphism and corrosion in endosperm with 3N chromosomes. Corrosives were used by dilution, and this did not damage the 3N chromosome endosperm, targeting the protein walls of microorganisms on the seed surface without eroding the seed surface, thereby providing biological sterilization. Besides, because it does not contain heavy metals, it did not cause polymorphism, that is, a mutation in the genetic sequence of the seed. Moreover, the environment and the equipment were sterilized with 2 - 3 repetitions, sterilizer treatment, planting, and germination operations were performed in a sterile environment this, in turn, allowed an isolated assessment of the yield of solution G. 展开更多

Benth, Lavandula angustifolia subsp, angustifolia, Melissa officinalis. The chemical compositionof a hydrodistilled essential oils of Ocimum basilicum var. album (L.) Benth., Lavandula angustifolia subsp, angustifolia, Melissaofficinalis was analyzed by a GC/MS system. Ocimum basilicum var. album (L.) Benth essential oil contains1,6-octadien-3-ol,3,7-dimethyl (53.79%), Lavandula angustifolia subsp, angustifolia essential oil 1,6-octadien-3-ol,3,7-dimethyl(42.07%), Melissa officinalis essential oil d-limonene (26%). Antimicrobial screening of the essential oils was made by disc diffusion.The antimicrobial test results showed that the Ocimum basilicum var. album (L.) Benth, Melissa officinalis, Lavandula angustifoliasubsp, angustifolia essential oils have great potential of antimicrobial activity against all three (Staphylococcus aureus (ATCC 6338)Gram positive, Escherichia coli (ATCC 10536), Pseudomonas aeruginosa (ATCC 15442) Gram negative bacteria), one fungi(Aspergillus niger), one yeast (Candida albicans) species tested. 展开更多

The purpose of this study was to determine the chemical composition,total phenolic composition,the antioxidant and antimicrobial properties of the essential oils(EOs)of Mentha piperita L.,Salvia officinalis L.,and Thymus vulgaris L.The essential oils of M.piperita L.,S.officinalis L.,and T.vulgaris L.were analyzed by means of gas chromatography-mass spectrometry(GC-MS)to demonstrate their chemical composition.The antioxidant properties of the EOs were evaluated with the 2,2-diphenyl-picrylhydrazyl(DDPH)free radical scavenging assay,their total phenolic compound contents were determined by the Folin Ciocalteau method,and their antimicrobial activities were evaluated by the disc diffusion assay.The major compounds in the contents of the essential oils of M.piperita L.,S.officinalis L.,and T.vulgaris L.were found to be eucalyptol,1R-α-pinene,and o-cymene,respectively.In the 2,2-diphenyl-picrylhydrazyl(DDPH)assay,the EO of M.piperita L.(8,930.01μMTE/g)demonstrated the highest antioxidant activity,followed by the activities of the EOs of T.vulgaris L.(157.76μMTE/g)and S.officinalis L.(115.54μMTE/g).The total phenolic compound contents of M.piperita L.,T.vulgaris L.,and S.officinalis L.were measured as 135.074,0.242,and 0.221 mMGAE/g.All essential oils showed antioxidant activities and antimicrobial activities.The highest antimicrobial activity against S.aureus,A.nigeris,and C.albicans was determined in the EO of M.piperita L.within diameters of 42,32,and 28 mm,respectively.These properties of essential oils are used in the pharmaceutical and food industries.The essential oils are approved as official medications in many countries and take place in their pharmacopoeias。 展开更多
