[Method] The impact of VC, VE and leathin on the yield and activity of sea cucumber peptide were investigated by using Glutathione as the standard and 1,10-Phenanthroline method. [Result] Under the conditions of 0.1% VC , 0.2% VE and 2.0% leathin, the activity of sea cucumber peptide was about 50% high and the extraction yield of it could reach 7.12%.
