Evaluation of Nutritional Composition of Two Fonio Ecotypes Grown in Casamance (Sénégal)

In order to better understand the cultural route, biochemical and nutritional composition of two ecotypes of fonio, a study was carried out in village of Tambananing located approximately 7 km from Sédhiou. The objective of studies was to determine nutritional composition of two ecotypes of fonio: the first called momo in short-cycle mandinka (75 - 90 days) and the other called medium-cycle dibong (90 - 110 days). For this, samples of two ecotypes were collected in an experimental field which was split into two equal parts, one sown with the momo ecotype and the other with the dibong ecotype. The nutritional composition (sugars, fats, proteins, minerals, ash, etc.) and the physicochemical properties (pH, humidity, water activity, color, etc.) of fonio’s were determined by appropriate physicochemical methods. The two ecotypes exhibited quite similar physicochemical properties. The levels of biochemical compounds were relatively close with protein contents of 7.05 ± 0.06 mg/100g for the momo ecotype and of 8.02 ± 0.04 mg/100g for the dibong ecotype, in carbohydrates (76.37 ± 1.2 mg/100g for momo and 78.7 ± 1.5 mg/100g for dibong) and in fat (2.92 ± 0.05 mg/100g for momo and 3.14 ± 0.004 mg/100g for dibong). Identical mineral element contents were found except for iron, an element for which the contents were 10.80 ± 0.008 mg/100g for the momo ecotype and 99.59 ± 0.005 mg/100g for the dibong ecotype. Thus, two ecotypes of fonio present a fairly interesting nutritional composition and their consumption deserves to be popularized and could contribute effectively to fight against the problems of malnutrition of certain vulnerable groups. 展开更多

The present study evaluated the sensory, composition, and quality of eggs from Cosmopolitan (C), Improved Horro (H), ♂ Improved Horro * Cosmopolitan ♀ (HC), ♂ Cosmopolitan * Improved Horro ♀ (CH), Indigenous(L), and Koekoek (KK) genotypes. A completely randomized design was used in the study. A total of 108 (18/genotype), 180 (30/genotype), and 90 (15/genotype) eggs were used for the sensory, composition, and egg quality tests, respectively. All data were analyzed following the GLM model using SAS software. The boiled and scrambled eggs from L, H, and C were (P ≤ 0.001) preferred followed by CH, HC, and KK. Results showed that KK, HC, CH, and C eggs were higher in moisture, crude fat, crude ash, and crude fiber, but these traits were found lower in H and L genotypes. A significantly highest crude protein was observed in L (21.19 ± 0.19) genotype, with higher in H (20.62 ± 0.26), intermediate in HC (19.96 ± 0.29), C (19.85 ± 0.10), and CH (19.40 ± 0.37), whereas the eggs from KK genotype had the lowest crude protein content (18.69 ± 0.20). The egg quality was (P = 0.001 - 0.01) affected across traits except for eggshell indices (P > 0.05). The genotypes with a negative significant correlation with crude protein had a positive significant correlation with almost all composition and egg external quality traits. The genotypes with positive significant correlations of egg weight had positive significant correlations with most internal egg quality traits except that of yolk weight ratio, yolk albumen ratio, and yolk color. Conclusively: the eggs of L, H, and C genotypes were best favored followed by CH and C, but the KK genotype was the least favored, and these differences were deemed due to genetic variations, and interventions. Furthermore, the eggs laid from genotypes with deep yellow yolk color might be the most nutritious. It could also necessitate future breeding and dietary studies. 展开更多

We studied species of plants foraged by red deer in the Muling forest region of northeastern China during January 2014 and 2015. We focused on nutritional composition, energy content, and the digestibility of these plants. Crude protein content varied by plant species.Average crude protein content was 7.5 ± 1.7% of dry matter, ranging from 4.5 to 10.3%. Crude lipid content did not vary by species and averaged 7 ± 1.5%(range5.4–9.8%). Non-fiber carbohydrate(NFC) and neutral detergent fiber(NDF) content varied broadly with average values being 20.1 ± 4.8%(range 13.5–28.8%) and64.7 ± 5.9%(range 53.5–71.8%), respectively. Energy content ranged from 16.7 to 19.7 k J/g. Average dry matter digestibility(DMD) was 46.1 ± 4.8%, with a range from38.7 to 54.6%. Only three plants, Saussurea manshurica,Aralia elata and Equisetum hyemale exhibited DMD [ 50%. NFC content explained most of the variation in energy content(r = 0.451). In contrast, energy content was inversely related to NDF(r =-0.443). There was no correlation between crude protein, crude lipid, and energy content(r_(protein)= 0.004, r_(lipid)=-0.190). S. manshurica,A. elata and E. hyemale had higher NFC and lower NDF content. Thus, these species offered the greatest nutritional value for wintering red deer in the study area. Along with high CP and NFC content, Taxus cuspidate also had high lignin content, and was thus, considered a good forage species for red deer. 展开更多

Traditionally persimmons have been consumed over-ripened to avoid astringency perception. However, the introduction of new technology that removes astringency while preserving fruit firmness has allowed the commercialization of “ready-to-eat crisp” fruits. Several studies have evaluated the nutritional composition of over-ripened persimmons and have claimed that they are a good source of primary and secondary metabolites that are favourable for human health. Yet very little is known about the nutritional composition of persimmons in the “ready-to-eat crisp” stage. In this context, we determined the main nutritional compounds in ten popular persimmon cultivars, including astringent cultivars (“Rojo Brillante”, “Tone Wase”, “Giboshi”, “Kaki Tipo”, “Aizumishirazu-A”, “Giombo”, “Hachiya”) and non-astringent cultivars (“O’gosho”, “Hana Fuyu” and “Jiro”). To this end, fruits were harvested when their texture was firm, and soluble polyphenols content, total antioxidant capacity and main sugars, organic acids and carotenoids were evaluated. In those astringent cultivars at harvest, the changes in nutritional compounds associated with applying deastringency treatment with high CO2 concentration were determined. Our results revealed the main sugars (glucose, fructose and sucrose), organic acids (citric acid, malic acid and succinic) and carotenoids (β-cryptoxanthin, lutein, violoxanthin, zeaxanthin, and β-carotene) present in the flesh of crisp persimmons. At harvest the content of these metabolites vastly varied among cultivars;astringent cultivars showed higher soluble polyphenols and greater antioxidant capacity, and presented higher contents of sugars and organic acids than non-astringent ones. The deastringency treatment applied to astringent cultivars resulted in a drastic loss of soluble polyphenols and total antioxidant capacity, and induced changes in carotenoids and sugars composition. 展开更多

Jams are delicious and nutritious spreads typically made from fruit, sugar and pectin that ensure availability of fruits in off-season. The study aimed to develop papaya-gooseberry jam and to evaluate sensory and nutritional parameters. Six variations of papaya: gooseberry jam was prepared besides the control T0 (100% papaya). The successive variations were T1 (95:5), T2 (90:10), T3 (85:15), T4 (80:20), T5 (75:25) and T6 (70:30). T-test and one-way analysis of variance (ANOVA) were applied to find the significant difference in sensory and nutritional parameters in different variations. Among different variations, the treatment (T4) was found to be the best on the basis of sensory evaluation with incorporation levels of 80 percent papaya and 20 percent gooseberry. The identified treatment (T4) was analyzed for nutritional composition in comparison to control (T0). Nutritional analysis showed that treatment (T0) contained maximum energy (353 Kcal/100g), protein (0.50 g/100g), carbohydrate (87.14 g/100g), fat (0.19 g/100g) and beta-carotene (195.0 g/100g) whereas the treatment (T4) was found to be high in nutrients such as fiber (1.32 g/100g), calcium (92.0 mg/100g), phosphorus (14.13 mg/100g), vitamin C (19.16 mg/100g) and antioxidant activity (98.0%). Thus, results signified that treatment (T4) was considered best in sensory and nutritional qualities and gooseberry could be successfully incorporated in fruit jams to enhance the nutritional properties of the food products. 展开更多

This study compared the chemical composition of wild sea cucumber Isostichopus sp., between February 2013 and January 2014. Sea cucumbers were captured by hand by artisanal fishermen and transported alive to the laboratory of Aquaculture of the Universidad del Magdalena (Colombia), where they were subsequently killed and taken to freeze until analysis. For proximate analysis 20 g of muscle were used for each sample. The analysis (in triplicate) was performed according to [1]. The phytochemical and nutritional composition of Trichosanthes cucumerina L. an underutilized vegetable used as substitute for Solanaceous tomatoes by rural dwellers was examined in comparison with majorly cultivated tomato cultivars in Nigeria (Roma VF and Ibadan local). The fruit pulp of T. cucumerina was higher in carotenoid (2053.33 mg/100g), flavonoid (861.67 mg/100g), cardiac glycoside (11.67 mg/100g), alkaloids (93.33 mg/100g), lycopene (118.5 μg/100g), tannin (555.00 mg/100g), oxalate (2.55 mg/100g) and quercetin (5.25 mg/100g) than Roma VF and Ibadan local. However, Roma VF had the highest concentration of saponin (66.67 mg/100g) but there was no significant difference in steroid among the fruits. The Vitamins A, E and C contents of T. cucumerina (5346 μg/100g, 6.23 μg/100g and 25.33 μg/100g) were significantly higher (P S. lycopersicum. T. cucumerina had the highest values of crude protein and crude lipid (1.97% and 0.40%). The fruit pulp of T. cucumerina also had the highest ash and total carbohydrate contents (1.63% and 16.50%). Roma VF was significantly higher in crude fibre and moisture contents (1.77% and 89.40%) than other vegetables investigated. All the evaluated mineral elements (Na, K, Ca Mg, Zn, Fe, Mn, P and S) in T. cucumerina compared favourably with S. lycopersicum cultivars. It was observed that T. cucumerina pulp contained an appreciable number of nutrients and secondary metabolites which qualify it as a good substitute to S.lycopersicum. 展开更多

Assessment of Nutritional Composition of Wild Vegetables Consumed by the People of Lebialem Highlands, South Western Cameroon

Wild vegetables contribute immensely to the culinary basket and livelihoods of rural communities in sub-Saharan Africa, especially among the people of Lebialem highlands of south western Cameroon where at least 26 such species are consumed as vegetables. To promote the consumption of these vegetables, the nutritional quality of five preferred species in this area, Amaranthus dubius Mart. Ex Thell., Gnetum africanum Welw., Lomariopsis guineensis (Unerw.) Alston, Pennisetum purpureum Schumach and Vernonia amygdalina Del., was assessed using standard methods. L. guineensis had the highest carbohydrate, protein, calorific value and ash content, and the lowest fat content of 4.05%, very rich in K, Ca and Mg and the amino acids leucine, arginine, lysine, phenylalanine and histidine. The amino acid content was generally higher than 25 mg/100g. Steroids, flavanoids and tannins occurred in moderate to high levels in all five species. Alkaloids and saponins occurred at very low levels, while triterpenes only occurred at very low levels in P. purpureum. The quality of Lomariopsis guineensis, a fern recently reported for the first time as edible is very promising. Pennisetum purpureum, popular as a forage plant, has now been shown to be valuable in the human diet. The study has established the safe and rich nutritional value of these vegetables and that their consumption could combat malnutrition and prevent some of the common nutritionally-related ailments. 展开更多

Wild native Elymus(Elymus dahuricus)is one of the most important and valuable forage grass on Qinghai-Tibetan Plateau(QTP)pasture of China.It mainly distributes above sea-level of 1700 to 3000 m on the QTP.The objective of this study was to investigate how the nutritive composition of Elymus responsed to the changes of altitude in local environments.Two test sites located at Minghe and Huangzhong counties,in which four sampling plots were arranged with sea levels of 1714,1872,2097 and 2185 m in Minhe County,while other four in Huangzhong County were with sea-level of 2560,2613,2668 and 2775 m.The whole plants of Elymus during anthesis stage were collected from all the plots for determining the indexes of crude protein(CP),crude fat(CF),neutral detergent fiber(NDF),acid detergent fiber(ADF),crude ash(ASH),calcium(Ca)and phosphorus(P).The results showed that the content of CP,crude ash and Ca changed irregularly corresponding to the altitude in the two counties,but significant higher with CP(1.09%),Ash(0.33%)and Ca(0.34%)in the low altitude areas(1714-2185 m)than those in the high altitude areas.NDF and ADF in the low altitude areas were significantly lower by 5.35% and 2.61% compared with those in the high altitude areas.There was no significant difference of CF as well as P in plant from different altitudes.Comprehensive evaluation revealed that superior nutritional composition of Elymus dahuricus presented at the sampling plots of altitude of 1714 m in Minhe County. 展开更多

The microbiological tests demonstrated that sumac and cloves had the highest antimicrobial activity with respect to total plate counting and spore forming count. Results showed that chemical composition of the spices and herbs varied significantly. Dry matter content ranged between 83.6% and 92.4%. The highest ash content 10.4% was found in sweet cumin, protein 21.2% in cumin, fat 19.7% in sumac, fiber 59.2% in turmeric and carbohydrates 27.3% in sumac. These spices were also differing in their minerals content. Substantial amounts of Ca, Na, K and Mg were found, while Cu, Fe, P, Mn and Zn were present in trace amounts in all investigated spices. 展开更多

Kjeldahl digestion method, Soxhlet extraction and furnace were used to determine nutritional values of pigeon pea, and physicochemical properties of soils were assessed using standard methods. The results showed that the levels of concentration of metals in mg/kg dry weight were ranged 105.17 to 144.07 for K, 8.95 to 12.67 for Mg, 7.74 to 12.27 for Ca, 0.247 to 0.543 for Fe, 0.122 to 0.313 for Zn, 0.061 to 0.432 for Mn, 0.087 to 0.134 for Cu and 0.0011 to 0.00196 for Cr. The proximate composition of pigeon pea was in the range of 19.28% to 25.79% for crude protein, 0.993% to 1.75% for crude fat, 3.75% to 5.31% for ash, 10.65% to 13.73% for moisture, 2.28% to 3.06% for fiber, 54.36% to 60.1% for carbohydrate and 326.8 to 345.23 Kcal for energy. The pH of the soil was in the range from pH 5.09 (strongly acidic) to 6.77 (slightly acidic), EC of the soil ranged from 0.047 to 0.14 dS/m (low)</span><span>,</span><span> the soil OC level was from 1.6% to 2.42% (moderate), total Nitrogen was from 0.12% to 0.23% (low to moderate), the available Phosphorus content of the soil </span><span>wa</span><span>s from 6.82 to 13.52 mg/kg (low to moderate), CEC value of the soil </span><span>wa</span><span>s from 14.8 to 23.53 meq/100g (moderate). The textural classes of soil were sandy clay loam for all sites except Abela abaya. In the present study the most popularly cultivated species of Nendran, Nijali poovan and Robusta banana in Southern India are selected. Variations in the nutritional and biochemical compositions associated with ripened and unripened stages of banana fruits were studied. Proximate composition, mineral and phytochemical compositions of ripened and unripened banana flours were analyzed and the total soluble sugars in unripened banana range from 1.70 to 2.15 mg/100g of the samples and that of ripened banana range from 37.5 to 43.8 mg/100g of the samples. Mineral compositions show that they are rich sources of calcium, phosphorus and iron. In addition to this they are rich sources of antioxidant potential phytochemicals such as polyphenols, flavanoids, vitamin C and lesser in quantity of anti nutritional factors such as phytates and oxalates. The current study revealed the variations of biochemical compositions of three varieties in unripened and ripened stages. This will be useful for the exploitation of these crops to obtain and formulate the value added products. 展开更多

Information of the difference in quality between farmed and wild fish is central to better ensuring fish products produced in aquaculture meet regulatory and consumer requirements.Proximate composition,amino acid and fatty acid profiles,and toxic elements contents of farmed and wild Chanodichthys mongolicus were established and compared.Significantly higher crude protein content while lower moisture content in farmed fish compared to wild fish were observed(P<0.05).The percentages of total amino acids(TAA),total essential amino acids(TEAA),total non-essential amino acids(TNEAA)and total delicious amino acids(TDAA) in farmed fish were all significantly higher than those in the wild equivalent(PO.05).Compared to the FAO/WHO recommended reference values,the ratios of TEAA/TAA(39.84%-40.33%) were comparable to 40%and TEAA/TNEAA(66.22%-67.60%) were above 60%.Fatty acid profiles in both fanned and wild C.mongolicus were dominated by monounsaturated fatty acid(MUFA),with farmed fish contained much more MUFA content compared to wild counterpart(P<0.05).Notably,wild fish exhibited significantly higher levels of total polyunsaturated fatty acid(PUFA) including eicosapentaenoic acid(EPA) and docosahexaenoic acid(DHA) than farmed fish(P<0.05).The EPA(C_(20:5n3))and linoleic acid(C_(18:2n6)) were the predominant PUFA in wild and fanned C.mongolicus,respectively.Moreover,farmed fish displayed an overall lower toxic element levels(As,Cd,Pb and Hg) in comparison with wild fish,and both were far lower than the established limit standard.In conclusion,our results suggest that the nutritional quality of farmed C.mongolicus was inferior to their wild counterpart with respect to fatty acids nutrition,and therefore further studies should focus on the improving C.mongolicus diet in order to enhance the overall nutritional composition. 展开更多

Investigations were carried out to determine the influence of spontaneous fermentations as achieved at household level on the nutrients composition and aflatoxins concentration of maize during the processing into doklu, a fermented maize food product consumed in Cote d’Ivoire with legumes, soup and fried fish. Results showed that maize grains contained aflatoxin B1, G1 and G2 and that during fermentation all physicochemical parameters significantly (P ≤ 0.05) decreased except moisture and total titratable acidity contents which were significantly (P ≤ 0.05) increased. Fermentation also caused significant reduction in the concentration of total aflatoxins (72%), with the most important reduction in aflatoxin B1 (80%) after the soaking of maize grains. However, no aflatoxin was detected after 24 hours of fermentation until the final product was obtained. Despite the losses in some nutritional compounds, the fermented product, doklu, was found to have appreciable nutritional quality. 展开更多

The aim of this study was to determine the optimal weaning protocols for rearing juvenile cuttlefish Sepia pharaonis,as well as to understand the feeding habits of cuttlefish and develop effective aqua-cultural practices.The effects of four experimental weaning protocols(i.e.,food type,cuttlefish size,food ration(bw d^−1)and feeding frequency(meals d^−1))on the growth,survival and muscle proximate composition of cuttlefish juvenile were studied in quintuplicate.The weaning period lasted 2 weeks.The results showed that cuttlefish fed with frozen white shrimp(Exopalaemon carinicauda)displayed a significantly higher survival,growth parameters,ingestion rate,food conversion rate,and muscle protein content when compared with the other prepared frozen foods.The larger individuals revealed better growth performance than smaller individuals,especially in terms of survival and specific growth rate,indicating that larger individuals were more receptive to frozen prey.Furthermore,size grading should be conducted to ensure better growth during weaning.As food rations increased,the survival,growth and muscle protein content of juveniles were promoted,whereas the most appropriate food ration for cuttlefish juvenile was 35%bw d^−1.Similarly,higher feeding frequency could stimulate the appetite of animals reared on weaning,and enhance survival,growth,and protein deposition compared to low feeding frequency.These results suggest that the optimal feeding protocols of juvenile weaning is as follows:the ideal prepared food is frozen shrimp,the weight of juveniles should be 4.0 g(32 days old)or more,the food ration should be 35%(bw d^−1),and the optimum feeding frequency is 4 meals day^-1.This study offers a promising starting point to successfully breed this candidate aquaculture species. 展开更多

Influence of dietary n-3 LC-PUFA on growth, nutritional composition and immune function in marine fish Sebastiscus marmoratus

A 60-day feeding experiment was conducted to investigate the influence of dietary omega-3 long-chain polyunsaturated fatty acids(n-3 LC-PUFA) on growth, nutritional composition and immune function of marine fish Sebastiscus marmoratus. Five diets containing 3.6, 10.2, 18.2, 26.5, or 37.0 g/kg n-3 LC-PUFA were prepared. The results reveal significant influences of dietary n-3 LC-PUFA on the final weight, weight gain, specific growth rate, feed conversion ratio, and condition factor. As dietary n-3 LCPUFA increased, weight gain and specific growth rate increased and were significantly higher in groups fed 18.2, 26.5 and 37.0 g/kg than in groups fed 3.6 and 10.2 g/kg( P <0.05); there was no significant difference between groups fed 18.2, 26.5, or 37.0 g/kg( P >0.05). With increasing dietary n-3 LC-PUFA, eicosapentaenoic acid and docosahexenoic acid content in muscle and liver increased significantly, immunoglobulin class M content gradually increased from 9.1 to 14.8 μg/L, and lysozyme activity content increased from 1355 to 2268 U/mL. Broken line model analysis according to weight gain indicated that a dietary n-3 LC-PUFA level of 18.2 g/kg is essential for normal growth at a fat level of 125 g/kg. Therefore, appropriate dietary n-3 LC-PUFA not only promote growth and improve the n-3 LC-PUFA content, but also enhance immune function in S. marmoratus. 展开更多

Recombinant plant-derived pharmaceuticals have been investigated for the last two decades and some products will soon be brought to market. Since veterinary pharmaceuticals seem to be the front-runners of plant-derived vaccines, we selected one model subunit vaccine, the structural capsid protein VP60 against rabbit haemorrhagic disease, and ana-lyzed the expression of three different sequences representing the vp60 open reading frame in potato plants. The gen-eration of antigenic VP60 molecules in the leaf and tuber tissue of potato was tremendously enhanced by replacing virus-derived sequences with plant-optimized codons. In order to identify potentially undesirable alterations in the composition of these genetically modified food components, we studied their nutrient composition and nutritional value in comparison to two parental conventional breeding varieties (Albatros and Desiree). The largest differences in nutrient composition were found between the two conventional breeds and between conventional Desiree and its near-isogenic genetically modified potato plant, indicating that genetic modification as well as conventional breeding can influence nutrient composition. Nevertheless, most parameters of nutritional value seemed to be more affected by conventional breeding than by genetic modification. 展开更多
