In any case,the amount of flour that can be subbed is up to a specific degree of sorghum flour to deliver sensory attractive products. The manipulation of the chemical composition, textural properties of the sorghum kernel, and selection of a proper hybrid could proffer desirable value addition results in bread making.The quality of the flour and the adherence to acceptable flour size standards is the key to producing good quality bread. Dough preparation and performance are two critical factors influencing the final quality of wheat products. The influence of high and low methoxyl pectins on empirical and dynamic rheological properties of dough and Chinese steamed bread(CSB)quality were investigated. Different concentrations of high methoxyl apple pectin(HMAP), low methoxyl apple pectin(LMAP),and amidation apple pectin(ALMAP) were tested. Results from dynamic and empirical rheological tests indicated that all concentrations of pectins tested(0.2%, 0.6%, and 1%) negatively affected the gluten network. The low methoxyl pectins, LMAP and ALMAP, which had higher anionic densities, resulted in a pronounced weakening of the dough. Meanwhile, dough fermentation properties improved in the presence of appropriate pectins concentrations, and higher maximum dough height, stability of dough pore space, and gas retention were recorded. HMAP was the pectin most effective in influencing dough fermentation properties at all tested concentrations. Regarding CSB quality, textural properties, specific volume, moisture content, and water-holding capacity were analyzed. Generally, the textural properties of CSB were improved, including improved springiness and decreased hardness and chewiness, when 0.2%–0.6% HMAP or LMAP was used. The specific volume of CSB was increased by adding 0.2%–1% HMAP,0.6%–1% LMAP, or 0.2%–0.6% ALMAP. Moreover, CSB moisture loss was progressively reduced in the presence of different pectins at all tested concentrations during storage. In conclusion, pectins, especially HMAP, are good additives for improving the fermentation properties of dough and overall quality of CSB. 展开更多

The Effect of Partially Substituted Lupin, Soybean, and Navy Bean Flours on Wheat Bread Quality

Their essential amino acid composition and concentration complements the amino acids in wheat and other cereals. In addition, breads fortified with protein rich legumes make the breads more palatable. In this study, we evaluated breads made from wheat flour partially substituted with soybean, navy bean, and lupin flours at 10%, 20%, and 30% levels. The physicochemical properties of breads were measured and compared with the control (made from 100% wheat flour). Statistical analysis was used to assess the significance of the differences. The breads fortified with soybean, lupin and navy bean flours showed remarkable springiness, similar to the breads made from wheat flour. However, the higher amount of substitution increased the firmness of the breads, probably due to the incorporation of additional fibers and proteins into the formulations. Compared to wheat bread, the volumes of 90:10 wheat-soybean, wheat-lupin, and wheat-navy bean breads decreased about 7%, 2%, and 10%, respectively. Higher substitution levels would result in a higher reduction in volume for all legumes tested. The volume reduction as a result of legume substitution appears to be navy bean flour > soybean flour > lupin flour. The inclusion of legumes in the bread formulations imparts a slightly darker crust color and crumb color with the exception of breads with the soybean flour substitution. Lupin appears to be the best substitution candidate among the legumes tested for fortified bread making. Lupin can be presented as a high-value protein source in developing marketable foods for health conscious consumers. 展开更多

In this work the effect of six varieties of durum wheat semolina on the bread physico-chemical and sensorial properties was addressed. In particular, whole grains of durum wheat (Anco Marzio, Claudio, Core, Iride, Saragolla and Cappelli) were finely milled by using an ancient stone milling system. Texture?analysis was carried out on both dough and bread samples to evaluate their firmness. Furthermore, tomographic analysis was performed on the bread samples in order to provide a more detailed view of their texture. The Glucose Equivalent, the chemical and the sensory analyses of the bread were also determined. Results highlighted that the lowest Glucose Equivalent valuewas achieved in bread produced with the Anco Marzio cultivar, which appeared instead the worst in terms of texture. Among the investigated samples, bread from the Cappelli variety showed good structural characteristic, a moderate Glucose Equivalent compared to the reference sample (CTRL) and the highest sensory quality. 展开更多

The results showed significant correlationsamong the principal parameters. There were significantly or extremely significantlypositive correlations among development time (DT), stability time (ST), farinographquality number (FQN) of farinograph, area, maximum resistance (Rmax), viscoelastic ratio(Rmax/E)of extensograph and mixing time (MT), 8-minute-curve-tail (8MCT) of mixograph.These indexes affected bread-making quality either directly or indirectly. Over the past few decades,the Internet has rapidly diffused across China.The spread of the Internet has had a profound economic and social impact on Chinese rural areas.Existing research shows that Internet access significantly impacts agricultural production and improves smallholder farmers’income.Beyond these,the Internet can affect other dimensions of social welfare.However,research about the impact of Internet access on dietary quality in rural China remains scarce.This study utilizes multi-period panel data from Fixed Observation Point in rural China from 2009 to 2015 to estimate the impact of Internet access on dietary quality and food consumption of rural households and conducts a causal analysis.Regression models with time and household fixed effects allow robust estimation while reducing potential issues of unobserved heterogeneity.The estimates show that Internet access has significantly increased rural household dietary quality(measured by the Chinese Diet Balance Index).Further research finds that Internet access has increased the consumption of animal products,such as aquatic and dairy products.We also examine the underlying mechanisms.Internet access improves dietary quality and food consumption mainly through increasing household income and food expenditure.These results encourage the promotion of Internet access as a valuable tool for nutritional improvements,especially in rural areas. 展开更多

Assessment of quality of bread incorporated with defatted sweet orange seed flour

The effect of incorporation of defatted flour from seeds of sweet orange on wheat flour bread quality was investigated.Seeds were removed from the fruits of sweet orange,sun dried,milled and defatted with ethanol.The defatted orange seed flour was incorporated into wheat flour at 5,10,and 15%.The chemical composition and physicochemical properties of the composite flours were assessed.The composite flours were used to prepare breads and the nutrients composition,antioxidant,physical and sensory qualities of the breads were determined.The water absorption,oil absorption,emulsifying and swelling capacities increased while foaming capacity and bulk density decreased with the addition of the defatted seed flour in the blends.The addition of defatted seed flour increased significantly(P<0.05)the ash(1.98%–3.05%),crude fiber(1.26%–2.98%)and carbohydrate(47.78%–55.90%)contents but decreased the moisture(23.59%–20.37%),crude fat(12.43%–8.98%)and protein(12.96%–8.72%)contents of the breads.The calcium,sodium,iron and zinc contents improved but phosphorus and potassium levels decreased with the incorporation of the defatted seed flour.The phenols,flavonoids,alkaloids,saponins,and carotenoids contents varied from 85.03–18.59 mg/100g,3.11–7.83 mg/100g,7.30–12.06 mg/100g,1.87–2.06 mg/100g,and 5.46–15.84 mg/100g,respectively.The loaf volume,specific volume and oven spring of breads decreased while loaf weight increased with the incorporation of defatted flour.The antioxidant activities of breads containing 15%defatted seed flour increased over that the 100%wheat bread.The ratings for the sensory attributes decreased with the addition of defatted seed flour in the breads.However,the ratings for the sensory qualities of breads containing 5 and 10%defatted seed flours did not differ significantly(P<0.05)from those of the 100%wheat bread.It is concluded that defatted flour from seeds of sweet orange fruits could be used to substitute 10%wheat flour in bread without adversely affecting the qualities of the breads. 展开更多

The dramatic increase in intracranial pressure after subarachnoid hemorrhage leads to a decrease in cerebral perfusion pressure and a reduction in cerebral blood flow.Mitochondria are directly affected by direct factors such as ischemia,hypoxia,excitotoxicity,and toxicity of free hemoglobin and its degradation products,which trigger mitochondrial dysfunction.Dysfunctional mitochondria release large amounts of reactive oxygen species,inflammatory mediators,and apoptotic proteins that activate apoptotic pathways,further damaging cells.In response to this array of damage,cells have adopted multiple mitochondrial quality control mechanisms through evolution,including mitochondrial protein quality control,mitochondrial dynamics,mitophagy,mitochondrial biogenesis,and intercellular mitochondrial transfer,to maintain mitochondrial homeostasis under pathological conditions.Specific interventions targeting mitochondrial quality control mechanisms have emerged as promising therapeutic strategies for subarachnoid hemorrhage.This review provides an overview of recent research advances in mitochondrial pathophysiological processes after subarachnoid hemorrhage,particularly mitochondrial quality control mechanisms.It also presents potential therapeutic strategies to target mitochondrial quality control in subarachnoid hemorrhage. 展开更多

Bread wheat(Triticum aestivum)is a staple food crop worldwide.The genetic dissection of important nutrient traits is essential for the biofortification of wheat to meet the nutritional needs of the world's growing population.Here,45,298 single-nucleotide polymorphisms(SNPs)from 55K chip arrays were used to genotype a panel of 768 wheat cultivars,and a total of 154 quantitative trait loci(QTLs)were detected for eight traits under three environments by genome-wide association study(GWAS).Three QTLs(qMn-3B.1,qFe-3B.4,and qSe-3B.1/qFe-3B.6)detected repeatedly under different environments or traits were subjected to subsequent analyses based on linkage disequilibrium decay and the P-values of significant SNPs.Significant SNPs in the three QTL regions formed six haplotypes for qMn-3B.1,three haplotypes for qFe-3B.4,and three haplotypes for qSe-3B.1/qFe-3B.6.Phenotypic analysis revealed significant differences among haplotypes.These results indicated that the concentrations of several nutrient elements have been modified during the domestication of landraces to modern wheat.Based on the QTL regions,we identified 15 high-confidence genes,eight of which were stably expressed in different tissues and/or developmental stages.TraesCS3B02G046100 in qMn-3B.1 and TraesCS3B02G199500 in qSe-3B.1/qFe-3B.6 were both inferred to interact with metal ions according to the Gene Ontology(GO)analysis.TraesCS3B02G199000,which belongs to qSe-3B.1/qFe-3B.6,was determined to be a member of the WRKY gene family.Overall,this study provides several reliable QTLs that may significantly affect the concentrations of nutrient elements in wheat grain,and this information will facilitate the breeding of wheat cultivars with improved grain properties. 展开更多

It has great taste and health benefits;also it is available most of the public places at reasonable prices which consumed by road side customers including general public, shopping personals, tourists, students. In our country, street vendors crushing sugarcane between roller crusher and sold without any heat treatment or preservative, also served with or without added ice and lemon juice. The study aimed to identify and compare the physico-chemical and microbial quality of sugarcane juice. The chemical qualities of juices including moisture, P<sup>H</sup>, ash, total soluble solid, total sugar, reducing sugar and titrable acidity were found slightly different in Mymensingh, Gazipur and Narayangonj areas. The highest and lowest value of moisture, ash, P<sup>H</sup>, total soluble solids, total sugar, reducing sugar and titrable acidity were found in 84.33% - 79.26% (Gazipur-Mymensingh), 0.57% - 0.04% (Mymensingh-Gazipur), 5.9 - 2.9 (Gazipur-Narayangonj), 17.48% - 4.98% (Mymensingh-Narayangonj), 21.9% - 6.56% (Mymensingh-Gazipur), 3.7 - 2.1 (Gazipur-Mymensingh) and 0.523% - 0.007% (Narayangonj-Gazipur) respectively. For microbiological analysis, the total viable count of sugar cane juice in Mymensingh, Gazipur and Narayangonj were ranged from 0.6 × 10<sup>5</sup> - 43.6 × 10<sup>5</sup> cfu/ml, 4.6 × 10<sup>5</sup> - 21.6 × 10<sup>5</sup> cfu/ml and 3.6 × 10<sup>5</sup> - 36.6 × 10<sup>5</sup> cfu/ml respectively, where the permitted value is 1.0 × 10<sup>4</sup> cfu/ml, whereas the total coliform count was ranged from 0.4 × 10<sup>5</sup> - 6.4 × 10<sup>5</sup> cfu/ml, 0.6 × 10<sup>5</sup> - 8.4 × 10<sup>5</sup> cfu/ml and 0.00 - 8.4 × 10<sup>5</sup> cfu/ml, where the permitted value is 100 cfu/ml and total fungal count was ranged from 5.5 × 10<sup>5</sup> - 56.5 × 10<sup>5</sup> cfu/ml, 21.5 × 10<sup>5</sup> - 54.5 × 10<sup>5</sup> cfu/ml and 32.5 × 10<sup>5</sup> - 68.5 × 10<sup>5</sup> cfu/ml, where the permitted value is 1000 cfu/ml. Despite its often illegal nature, artisanal gold mining in Burkina Faso contributes to the economic and social development of the country. However, the rudimentary techniques used in gold panning have a significant impact on the environment due to inappropriate practices and the use of various chemical substances. This study aims to assess the impact of artisanal gold mining on the quality of water resources in a rural community at Méguet, Burkina Faso. To this end, surface and groundwater samples were collected and analyzed at the BUMIGEB laboratory. Field results show that the waters are slightly alkaline (6.97 < pH < 8.1), weakly mineralized and conductive (124 < EC < 543 μS/cm), with temperatures ranging from 24.6˚C to 31.6˚C. In addition, trace metals (TMEs) analyzed from surface and subsurface waters show very high levels, generally deviating from the levels recommended by WHO guidelines for Burkina Faso. Trace metals contamination of water resources in the commune of Méguet is mainly due to Fe (3.78 - 11.12 mg/kg), Hg (0.03 - 0.29 mg/kg), As (0.01- 6.31 mg/kg) and Pb (0.01 - 3.8 mg/kg). This study can serve as a basis for guiding national environmental policies to protect the water resources of the Méguet mine. 展开更多

Investigating the Influence of Glaucoma on the Quality of Life among Adult Patients

Background: Research exploring the influence of glaucoma on quality of life has gained momentum in recent years. Numerous studies have investigated the multifaceted aspects of quality of life in glaucoma patients, utilizing various assessment tools and methodologies. Objective: To determine the influence that glaucoma has on the quality of life among adult patients. Study site: kitwe teaching eye hospital, Zambia. Method: It was a cross-sectional study that was conducted from 30<sup>th</sup> June 2022 to 17<sup>th</sup> April 2023. The study included 106 diagnosed glaucoma patients who were above the age of 55 years. Data was collected using validated 25-item national eye institute visual function Questionnaire (NEI VFQ-25). The data was analyzed using SPSS version 26 and Microsoft excel to present frequencies and percentages that generated graphical presentation. Results: 62% of the participants worry about their eye sight most of the time, 26% sometimes and 12% a little time. 9% of the participants had little difficulty to read ordinary prints, 14% moderate difficulties and 58% extremely difficult. 40% of the participants could drive despite glaucoma damaging their eyes while 60% could not. Majority of the patients said it was difficult noticing things around them while walking or sitted in one place. There was a significant difference between effects of glaucoma on patients and the existing relationship between glaucoma and quality of life (ANOVA, p = 0.019 and ANOVA, p = 0.023). Conclusion: This study has demonstrated the magnitude of impact that glaucoma has on the Quality of Life (QoL) in diagnosed patients and the relationship between glaucoma and the Quality of Life. Due to the progressive visual loss, the amount of activities these patients would perform is negatively affected especially where social and economic activities are concerned which also affects their monthly earnings for those living in middle to low-income countries. Therefore, social welfare and psycho-social institutions need to increase their support for these glaucoma patients. 展开更多

A series of comprehensive petrographic and geochemical analyses were performed to unravel the diagenetic features and their impact on the reservoir quality.Petrographically, the sandstones are dominated by feldspathic litharenites and lithic arenites with fine to medium grain sizes and moderate to good sorting. The reservoir quality varies greatly with a range of porosity from 0.2% to 36.1% and permeability from 0.016 ×10~(–3) μm~2 to 4 301 ×10~(–3) μm~2, which is attributed to complex diagenetic evolution related to sedimentary facies;these include compaction, cementation of calcite, dolomite, siderite and framboidal pyrite in eogenetic stage;further compaction, feldspar dissolution, precipitation of ferrocalcite and ankerite, quartz cements, formation of kaolinite and its illitization, precipitation of albite and nodular pyrite, as well as hydrocarbon charge in mesogenetic stage. The dissolution of feldspar and illitization of kaolinite provide internal sources for the precipitation of quartz cement, while carbonate cements are derived from external sources related to interbedded mudstones and deep fluid. Compaction is the predominant factor in reducing the total porosity, followed by carbonate cementation that leads to strong heterogeneity. Feldspar dissolution and concomitant quartz and clay cementation barely changes the porosity but significantly reduces the permeability.The high-quality reservoirs can be concluded as medium-grained sandstones lying in the central parts of thick underwater distributary channel sandbodies(>2 m) with a high content of detrital quartz but low cement. 展开更多

In this research, reservoir quality controlling factors have been investigated in a well in one of the oil fields in Dezful Embayment, SW Iran. Based on this research, depositional environment, diagenesis and fracturing have been affected on reservoir quality. 3 distinct depositional settings can be recognized in the studied interval including tidal flat, lagoon, and shoal. Among these depositional setting, shoal environment with ooid grainstone microfacies along with interparticle porosity shows good reservoir characteristics. Diagenetic processes also play an important role on reservoir quality;dolomitization and dissolution have positive effects on porosity and enhances reservoir quality, while cementation, anhydritization and compaction have negative effect on it. Fracturing is another important factor affected on the carbonate reservoirs especially in the Asmari Formation. 展开更多

Exploring groundwater quality in semi-arid areas of Algeria:Impacts on potable water supply and agricultural sustainability

Groundwater quality assessment is important to assure safe and durable water use.In semi-arid areas of Algeria,groundwater represents the main water resource for drinking water supply of the rural population as well as for irrigation of agricultural lands.Groundwater samples from wells and springs were collected from the Gargaat Tarf and Annk Djemel sub-watersheds of the Oum El Bouaghi,Algeria,and were analyzed and compared with the World Health Organization(WHO)standards.Results showed that most of the measured physical and chemical parameters exceeded the quality limits according to the WHO standards.Groundwater had a slightly alkaline water pH(7.00-7.79),electrical conductivity>1500μS/cm,chloride>500 mg/L,calcium>250 mg/L,and magnesium>155 mg/L.Water quality index(WQI)results showed that 68%of the area had excellent water quality,24%of the samples fell into good category,and only 8%were of poor quality and unsuitable for human consumption.Six wells in the area showed bacterial contamination.Total coliforms(453.9(±180.3)CFU(colony-forming units)/100 mL),fecal coliforms(243.2(±99.2)CFU/100 mL),and fecal streptococci(77.9(±32.0)CFU/100 mL)loads were above the standard limits set by the WHO.These results confirmed that water resources in the study area were strongly influenced by anthropogenic activities and were not recommended for consumption as drinking water. 展开更多

AIM:To compare the vergence mechanisms between good and poor sleepers in university students.METHODS:A total of 64 university students were recruited in this study.The validated Malay version of Pittsburgh Sleep Quality Index questionnaire(PSQI-M)was used to measure the participants’sleep quality over the past month.Participants were categorized as good sleepers(n=32)and poor sleepers(n=32)based on the PSQI-M scores.Heterophoria and fusional vergences were measured at distance and near.Mann-Whitney U test was used to compare heterophoria,negative fusional vergence(NFV),and positive fusional vergence(PFV)at distance and near between good and poor sleepers.Spearman correlation analysis was used to study the relationship between PSQI-M score and PFV at distance.RESULTS:Both distance and near heterophorias were not significantly different between good and poor sleepers(P>0.05).There was a difference in distance PFV(P<0.05)between good and poor sleepers,but not in distance NFV,near NFV,and near PFV(P>0.05).Distance PFV was negatively correlated with PSQI-M score(rs=-0.33,P<0.05).CONCLUSION:University students with poor sleep quality demonstrates a reduced ability to maintain fusion with increasing convergence demand at distance.Sleep quality assessment during binocular vision examination in university students is recommended. 展开更多

Introduction: Ramadan is the ninth lunar month of the Muslim calendar, and fasting during Ramadan is one of the five pillars of Islam. Muslim cancer patients and health professionals are faced with a dilemma between the necessity of fasting and its possible adverse effects during Ramadan on the health status of cancer patients. We believe that addressing the issue of fasting in cancer patients is of global interest. Objectives: Prevalence of fasting in cancer patients during Ramadan;Predictive factors of Ramadan fasting in cancer patients;The effect of fasting during Ramadan on the quality of life of cancer patients. Materials and Methods: A structured questionnaire was used to interview adult cancer patients who received chemotherapy IV—or oral treatment at the medical oncology department at the Hassan II University Hospital in Fez during the month of Ramadan 1443 Hijri (April to May 2022). The quality of cancer patients’ lives during their fasting practice in Ramadan was evaluated via the QLQ-C30 questionnaires. Results: 48% of patients did not fast during Ramadan, 22% and 30% were partial and complete fasters respectively. Patients, with OMS 0 to 1, who receive outpatient treatment, non-metastatic patients and patients on oral treatment were more frequent in the completely fasted group. All these factors showed statistically significant values (p < 0.05). 44% of patients sought advice from the treating oncologist if they could fast, while only 15% of patients during Ramadan asked an imam if they could be excused from fasting. A comparison of the QLQ-C30 data showed a significant improvement in emotional functioning with fasting, however, patients had clinically more but not significantly fatigue after fasting. Conclusion: Female gender, good WHO, non-metastatic disease, and oral or outpatient treatment were more likely to be fasting. This study argues that fasting did not influence the quality of life, and appears to significantly improve emotional functioning in cancer patients during Ramadan. 展开更多
