Oyster(Crassostrea gigas),the main ingredient of oyster sauce,has a strong umami taste.In this study,three potential umami peptides,FLNQDEEAR(FR-9),FNKEE(FE-5),and EEFLK(EK-5),were identified and screened from the alcoholic extracts of the oyster using nano-HPLC-MS/MS analysis,i Umami-Scoring Card Method(i Umami-SCM)database and molecular docking(MD).Sensory evaluation and electronic tongue analysis were further used to confirm their tastes.The threshold of the three peptides ranged from 0.38 to 0.55 mg/m L.MD with umami receptors T1R1/T1R3 indicated that the electrostatic interaction and hydrogen bond interaction were the main forces involved.Besides,the Phe592 and Gln853 of T1R3 were the primary docking site for MD and played an important role in umami intensity.Peptides with two Glu residues at the terminus had stronger umami,especially at the C-terminus.These results contribute to the understanding of umami peptides in oysters and the interaction mechanism between umami peptides and umami receptors. 展开更多

Metal-ion batteries(MIBs),including alkali metal-ion(Li^(+),Na^(+),and K^(3)),multi-valent metal-ion(Zn^(2+),Mg^(2+),and Al^(3+)),metal-air,and metal-sulfur batteries,play an indispensable role in electrochemical energy storage.However,the performance of MIBs is significantly influenced by numerous variables,resulting in multi-dimensional and long-term challenges in the field of battery research and performance enhancement.Machine learning(ML),with its capability to solve intricate tasks and perform robust data processing,is now catalyzing a revolutionary transformation in the development of MIB materials and devices.In this review,we summarize the utilization of ML algorithms that have expedited research on MIBs over the past five years.We present an extensive overview of existing algorithms,elucidating their details,advantages,and limitations in various applications,which encompass electrode screening,material property prediction,electrolyte formulation design,electrode material characterization,manufacturing parameter optimization,and real-time battery status monitoring.Finally,we propose potential solutions and future directions for the application of ML in advancing MIB development. 展开更多

In this paper,tannic acid(TA)and Fe~(3+)were added to form a layer of metal-polyphenol network structure on the surface of the nanoparticles which were fabricated by zein and carbon quantum dots(CQDs)encapsulating phlorotannins(PTN).pH-Responsive nanoparticles were prepared successfully(zein-PTN-CQDs-Fe-~Ⅲ).Further,the formation of composite nanoparticles was confirmed by a series of characterization methods.The zeta-potential and Fourier transform infrared spectroscopy data proved that electrostatic interaction and hydrogen bonding are dominant forces to form nanoparticles.The encapsulation efficiency(EE)revealed that metal-polyphenol network structure could improve the EE of PTN.Thermogravimetric analysis and differential scanning calorimetry experiment indicated the thermal stability of zein-PTN-CQDs-Fe~Ⅲnanoparticles increased because of metal-polyphenol network structure.The pH-responsive nanoparticles greatly increased the release rate of active substances and achieved targeted release. 展开更多

Ex situ characterization techniques in molecular beam epitaxy(MBE)have inherent limitations,such as being prone to sample contamination and unstable surfaces during sample transfer from the MBE chamber.In recent years,the need for improved accuracy and reliability in measurement has driven the increasing adoption of in situ characterization techniques.These techniques,such as reflection high-energy electron diffraction,scanning tunneling microscopy,and X-ray photoelectron spectroscopy,allow direct observation of film growth processes in real time without exposing the sample to air,hence offering insights into the growth mechanisms of epitaxial films with controlled properties.By combining multiple in situ characterization techniques with MBE,researchers can better understand film growth processes,realizing novel materials with customized properties and extensive applications.This review aims to overview the benefits and achievements of in situ characterization techniques in MBE and their applications for material science research.In addition,through further analysis of these techniques regarding their challenges and potential solutions,particularly highlighting the assistance of machine learning to correlate in situ characterization with other material information,we hope to provide a guideline for future efforts in the development of novel monitoring and control schemes for MBE growth processes with improved material properties. 展开更多

Food allergens are mainly naturally-occurring proteins with immunoglobulin E(IgE)-binding epitopes.Understanding the structural and immunogenic characteristics of allergenic proteins is essential in assessing whether and how food processing techniques reduce allergenicity.We here discuss the impacts of food processing technologies on the modification of physicochemical,structural,and immunogenic properties of allergenic proteins.Detection techniques for characterizing changes in these properties of food allergens are summarized.Food processing helps to reduce allergenicity by aggregating or denaturing proteins,which masks,modifies,or destroys antigenic epitopes,whereas,it cannot eliminate allergenicity completely,and sometimes even improves allergenicity by exposing new epitopes.Moreover,most food processing techniques have been tested on purified food allergens rather than food products due to potential interference of other food components.We provide guidance for further development of processing operations that can decrease the allergenicity of allergenic food proteins without negatively impacting the nutritional profile. 展开更多

The purpose of this study is to investigate the physicochemical properties of some local varieties of onion (Allium cepa L.) and compare them with an imported variety, all collected in May 2021. Proteins, reducing sugars, lipids, and polyphenol content were estimated according to the AFNOR standardized methods. The determination of calcium, magnesium, iron, sodium, potassium and phosphorus was performed by atomic absorption spectrophotometer coupled with a CCD detector. The results highlighted an average acidity of 0.377% ± 0.002% lower than the value of the imported variety which is 0.520% ± 0.001%. Local varieties have a pH ranging from 6.35 ± 0.003 to 6.42 ± 0.004, while the variety has a pH of 6.36 ± 0.003. The ash and dry matter contents vary respectively from 4.788% ± 0.004% to 8.253% ± 0.003% and 7.945% ± 0.021% to 11.945% ± 0.007% for the local varieties. Moreover, the imported one has ash and dry matter contents of 5.175% ± 0.007% and 10.035% ± 0.021% respectively. The results show that the protein, reducing sugar and lipid contents in the local onion varieties vary respectively from 2.815 ± 0.000 to 15.634 ± 0.001 g·100 g<sup>-1</sup>;4.691 ± 0.001 to 12.596 ± 0.002 g·100 g<sup>-1</sup> and 0.006 ± 0.001 to 0.050 ± 0.057 g·100 g<sup>-1</sup>. Furthermore, the imported variety has a protein, reducing sugar and lipid content of 5.649 ± 0.002;8.565 ± 0.002 g·100 g<sup>-1</sup> and 0.011 ± 0.010 g·100 g<sup>-1</sup> respectively. The maximum levels of total polyphenols are obtained in the imported variety, Bellani and Gandiol, respectively 9.973 ± 0.001, 4.535 ± 0.002, and 3.425 ± 0.006 mg EAG/g of dry matter. The local varieties have a significant calorific intake of between 35.451 ± 0.001 and 112.980 ± 0.003 kcal·100 g<sup>-1</sup> compared to the imported one with an energy value of 56.953 ± 0.001 kcal·100 g<sup>-1</sup> of dry matter. The bulbs of different onion varieties studied have a fairly high content of mineral elements. The potassium content of local varieties is between 502.16 ± 0.06 mg·100 g<sup>-1</sup> and 582.77 ± 0.04 mg·100 g<sup>-1</sup> while the imported variety has a content of 536.62 ± 1.30 mg·100 g<sup>-1</sup>. They note that the local varieties have a better calcium content (249.75 ± 0.07 to 434.20 ± 0.57 mg·100 g<sup>-1</sup>) and magnesium (142.15 ± 0.07 to 162.60 ± 0.42 mg·100 g<sup>-1</sup>) than the imported variety (229.58 ± 0.04 mg·100 g<sup>-1</sup>) except for the varieties White Grano (228.29 ± 0.01 mg·100 g<sup>-1</sup>) and Rouge Amposta (117.00 ± 0.42 mg·100 g<sup>-1</sup>) respectively. These results reveal that Gandiol, Dayo and Orient F1 are nutritionally found better due to their higher antioxidant property, proteins, carbohydrates, and reducing sugar and should be included in diets to supplement our daily allowance needed by the body. 展开更多

The wastewater analysis revealed high levels of Biochemical Oxygen Demand (BOD5), Chemical Oxygen Demand (COD), and fecal coliforms, signaling potential risks to the well-being of students and staff. This situation mirrors a wider issue in rural educational settings, where inadequate sanitation persists. Intensive wastewater treatment options are known for their effectiveness against high pollutant loads but are resource-intensive in both energy and cost. Conversely, extensive treatment systems, while requiring more land, provide a sustainable alternative by harnessing natural processes for pollutant removal. The research suggests a hybrid treatment approach could serve the school’s needs, balancing the robust capabilities of intensive methods with the ecological benefits of extensive systems. Such a solution would need to be tailored to the specific environmental, financial, and logistical context of the school, based on comprehensive feasibility studies and stakeholder engagement. This study’s findings underscore the urgency of addressing sanitation in schools, as it is intrinsically linked to the health and academic success of students. Quick, effective, and long-term strategies are vital to secure a healthier and more prosperous future for the youth. Herein, we report some characteristics of the clayey materials (CMs) collected from Kaliwa (C1), Kabé (C2) and Malo (C3) district in N’Djamena (Chad). Three samples were characterized applying XRF, XRD, FTIR, SEM. In addition, TGA/DSC were performed to control decomposition/mass loss and show phase transitions respectively of CMs. Geochemical analysis by XRF reveals the following minerals composition: SiO<sub>2</sub> (~57% - 66%), Al<sub>2</sub>O<sub>3 </sub>(~13% - 15%), Fe<sub>2</sub>O<sub>3</sub> (~6% - 10%), TiO<sub>2</sub> (~1% - 2%) were the predominant oxides with a reduced proportion in C1, and (~7%) of fluxing agents (K<sub>2</sub>O, CaO, Na<sub>2</sub>O). Negligible and trace of MgO (~1%) and P<sub>2</sub>O<sub>5</sub> was noted. The mineralogical composition by XRD shows that, C1, C2 and C3 display close mineralogy with: Quartz (~50%), feldspar (~20%) as non-clay minerals, whereas clays minerals were mostly kaolinite (~15%), illite (~5%) and smectite (~10%). FTIR analysis exhibits almost seemingly similar absorption bands characteristic of hydroxyls elongation, OH valence vibration of Kaolinite and stretching vibration of some Metal-Oxygen bond. SEM micrographs of the samples exhibit microstructureformed by inter-aggregates particles with porous cavities. TGA/DSCconfirm the existence of quartz (570˚C to 870˚C), carbonates (600˚C - 760˚C), kaolinite (569˚C - 988˚C), illite (566˚C - 966˚C), MgO (410˚C - 720˚C) and smectite (650˚C - 900˚C). The overall characterization indicates that, these clayey soils exhibit good properties for ceramic application. 展开更多

BACKGROUND Artificial intelligence(AI)has potential in the optical diagnosis of colorectal polyps.AIM To evaluate the feasibility of the real-time use of the computer-aided diagnosis system(CADx)AI for ColoRectal Polyps(AI4CRP)for the optical diagnosis of diminutive colorectal polyps and to compare the performance with CAD EYE^(TM)(Fujifilm,Tokyo,Japan).CADx influence on the optical diagnosis of an expert endoscopist was also investigated.METHODS AI4CRP was developed in-house and CAD EYE was proprietary software provided by Fujifilm.Both CADxsystems exploit convolutional neural networks.Colorectal polyps were characterized as benign or premalignant and histopathology was used as gold standard.AI4CRP provided an objective assessment of its characterization by presenting a calibrated confidence characterization value(range 0.0-1.0).A predefined cut-off value of 0.6 was set with values<0.6 indicating benign and values≥0.6 indicating premalignant colorectal polyps.Low confidence characterizations were defined as values 40%around the cut-off value of 0.6(<0.36 and>0.76).Self-critical AI4CRP’s diagnostic performances excluded low confidence characterizations.RESULTS AI4CRP use was feasible and performed on 30 patients with 51 colorectal polyps.Self-critical AI4CRP,excluding 14 low confidence characterizations[27.5%(14/51)],had a diagnostic accuracy of 89.2%,sensitivity of 89.7%,and specificity of 87.5%,which was higher compared to AI4CRP.CAD EYE had a 83.7%diagnostic accuracy,74.2%sensitivity,and 100.0%specificity.Diagnostic performances of the endoscopist alone(before AI)increased nonsignificantly after reviewing the CADx characterizations of both AI4CRP and CAD EYE(AI-assisted endoscopist).Diagnostic performances of the AI-assisted endoscopist were higher compared to both CADx-systems,except for specificity for which CAD EYE performed best.CONCLUSION Real-time use of AI4CRP was feasible.Objective confidence values provided by a CADx is novel and self-critical AI4CRP showed higher diagnostic performances compared to AI4CRP. 展开更多

Energy storage is an ever-growing global concern due to increased energy needs and resource exhaustion.Sodium-ion batteries(SIBs)have called increasing attention and achieved substantial progress in recent years owing to the abundance and even distribution of Na resources in the crust,and the predicted low cost of the technique.Nevertheless,SIBs still face challenges like lower energy density and inferior cycling stability compared to mature lithium-ion batteries(LIBs).Enhancing the electrochemical performance of SIBs requires an in-deep and comprehensive understanding of the improvement strategies and the underlying reaction mechanism elucidated by in situ techniques.In this review,commonly applied in situ techniques,for instance,transmission electron microscopy(TEM),Raman spectroscopy,X-ray diffraction(XRD),and X-ray absorption near-edge structure(XANES),and their applications on the representative cathode and anode materials with selected samples are summarized.We discuss the merits and demerits of each type of material,strategies to enhance their electrochemical performance,and the applications of in situ characterizations of them during the de/sodiation process to reveal the underlying reaction mechanism for performance improvement.We aim to elucidate the composition/structure-per formance relationship to provide guidelines for rational design and preparation of electrode materials toward high electrochemical performance. 展开更多

Background: To preserve its nutritional properties, fish must have good sanitary quality. The objective of this study was to investigate some pathogens contaminating smoked, dried, and braised fish marketed in Ouagadougou. Methodology: Potential pathogens of Enterobacteriaceae and Staphylococcus were screened in eight (8) species of processed fish. The investigation of the germs was carried out following the normative methods of microbiology. The identities of the strains were determined by API 20 E (BioMerieux S.A., France) and API STAPH (BioMerieux S.A., France) kits for Enterobacteriaceae and Staphylococcus species respectively. The uidA gene profile in Escherichia coli isolates was determined by simplex PCR. The identity of Staphylococcus aureus was confirmed by amplification of specific 23S rDNA regions and nuc gene profile with PCR. Results: A total of 235 fish samples were analyzed. A diversity of Enterobacteriaceae and Staphylococcus was detected. Twenty species of Enterobacteriaceae were identified among which, the most frequent were Escherichia coli, Salmonella sp, Raoultella ornithinolytica and Serratia odorifera, respectively in 22.6%, 4.3%, 28.9%, 17.4% of the samples analyzed. However, eleven species of Staphylococcus were identified among which, Staphylococcus xylosus, Staphylococcus aureus, Staphylococcus lugdunensis, and Staphylococcus sciuri were the most frequent with respective percentages of 47.7%, 23.4%, 12.8% and 10.6% of samples. For all the samples, the species frequently isolated were: Raoultella ornithinolytica, Escherichia coli, Serratia odorifera, Staphylococcus aureus, Staphylococcus xylosus, and Staphylococcus lugdunensis. The uidA gene specific to Escherichia coli was detected in 82.85% of strains (29/35). Amplification of the specific 23S rDNA region using staur primers was observed in 98% (49/50) of the isolated Staphylococcus aureus strains and the nuc gene was detected in 86% of Staphylococcus aureus strains. Conclusion: The isolated bacteria are potential pathogens involved in foodborne illnesses and intoxications. Streptococcus agalactiae is one of the most common pathogens that cause bovine mastitis worldwide. Identifying pathogen prevalence and virulence factors is critical for developing prevention and control approaches. Herein, 1 161 milk samples from various dairy farms in China(n=558) and Pakistan(n=603) were collected between 2019–2021 and were subjected to S. agalactiae isolation. Prevalence, serotyping, virulence genes, and antibiotic-resistant genes of S. agalactiae were evaluated by PCR assay. All isolates were characterized for haemolysis, biofilm production, cytotoxicity, adhesion, and invasion on bovine mammary epithelial cells. The prevalence of S. agalactiae-induced mastitis in cattle was found to be considerably higher in Pakistan than in China. Jiangsu and Sindh provinces had the highest area-wise prevalence in China and Pakistan, respectively. Serotypes Ia and II were prevalent in both countries, whereas serotype III was found only in Pakistan. Moreover, all isolates tested positive for PI-2b gene but negative for PI-1 and PI-2a genes. All isolates harboured cfb, cylE, hylB, and fbsB virulent genes, whereas many of them lacked bibA, rib and bca. However, the absence of bac and scp genes in Chinese isolates and cspA in Pakistani isolates was noted, while spb1 and lmb were not detected in isolates of both countries. Pakistani isolates, particularly serotype Iapositive, had a considerably higher ability to produce biofilm, haemolysis, cytotoxicity, adhesion, and invasion than Chinese isolates. Most of the isolates were phenotypically resistant to tetracycline, erythromycin, and clindamycin and genotypic resistance was confirmed by the presence of ermA, ermB, tetM and tetO genes. Our study highlights the antimicrobial resistance profile and virulence-related factors contributing to the epidemiological spread of mastitis-causing S. agalactiae in China and Pakistan. The findings may facilitate future studies designed to develop improved treatment and control strategies against this pathogen. 展开更多

A blast furnace slag zeolite(BFSZ)material was successfully synthesized from BFS by alkaline fusion and hydrothermal treatment.Via the analyses of XRD,FT-IR,FE-SEM,XRF,CEC and BET surface area measurement,when zeolite was synthesized at a crystallization temperature of 100℃with initial Si/Al ratio of 1:1,the main composition in the product is Na-A zeolite.Under the above conditions,the BFSZ was synthesized with CEC of 3.06 meq/g and maximum BET surface area of 37.55 m^(2)·g^(-1).Moreover,the incorporating of BFS-derived minor metals(such as Mg,Fe,and Ca)are found to be of little importance for the synthesis of BFSZ.Thus the obtained BFSZ material has a great adsorption performance for removing Mn^(2+),Cu^(2+),and NH_(4)^(+)ions diluted in water,owing to the higher CEC. 展开更多

Nanowires have emerged as promising one-dimensional materials with which to construct various nanocircuits and nanosensors.However,measuring the electrical properties of individual nanowires directly remains challenging because of their small size,thereby hindering the comprehensive understanding of nanowire-based device performance.A crucial factor in achieving reliable electrical characterization is establishing well-determined contact conditions between the nanowire sample and the electrodes,which becomes particularly difficult for soft nanowires.Introduced here is a novel technique for measuring the conductivity of an individual nanowire with the aid of automated nanomanipulation using an atomic force microscope.In this method,two nanowire segments cut from the same silver nanowire are positioned onto a pair of gold electrodes,serving as flexible nanoprobes to establish controllable contact with the sample.By changing the contact points along the nanowire sample,conductivity measurements can be performed on different regions,thereby eliminating the influence of contact resistance by analyzing multiple current–voltage curves.Using this approach,the resistivity of a 100-nm-diameter silver nanowire is determined to be 3.49×10^(−8)Ωm. 展开更多

The aim of the present study is to evaluate the effect of alloy processing and composition as well as the pH control and testing medium on the in vitro corrosion performance of Mg-Zn-Ca systems for biodegradable implants.The grain size and secondary phases were analyzed by optical microscopy,scanning electron microscopy,transmission electron microscopy,and X-ray diffraction.Scanning kelvin probe force microscopy(SKPFM)was used to analyze the Volta potential values of the second phases.The corrosion performance of the three alloys was evaluated by electrochemical and hydrogen evolution methods inα-MEM with and without organic species(i.e.complete and inorganicα-MEM).Two strategies were followed to evaluate the influence of the pH on the corrosion behavior:daily solution replacement and CO_(2)flow based pH control.For all the materials,the organic medium accelerates the corrosion process.Constant pH maintained by CO_(2)flow through the medium results in considerably higher corrosion rates for all alloys.The impact of pH is lesser on the as-cast alloys due to the barrier effect of the secondary phases,particularly pronounced in the Mg1Zn1Ca alloy which showed the lowest corrosion rate.The wrought Mg0.5Zn0.2Ca alloy that lacks the refined secondary phase network and exhibits high number of twins undergoes accelerated uniform corrosion under constant pH conditions. 展开更多

Colloidal particles,heterogeneous mixture with various organic components and continuous molecular weight(MW)distribution,is omnipresent in lake sediments and substantially influence the retention,transportation,and fate of contaminants in lake ecosystem.We sampled and extracted sedimentary colloids from different ecology regions in Taihu Lake,Jiangsu,East China,in June 2020,and they were further separated into four different particle size ranges by tangent ultrafiltration,and the properties of colloids were studied in various methods,including zeta potential analysis,transmission electron micrograph images(TEM),Fourier transformation infrared(FTIR),and 3D fluorescence.Results show that the surface of the colloids is covered with organic macromolecular substances,such as humuslike substances and protein-like substances.There were significant differences in molecular weight and fraction content of colloids in the sediments from macrophyte-dominant(MD)area and algae-dominant(AD)area in the lake.Colloids from MD area are mainly composed of humic acid,protein,and fulvic acid;the content of fulvic acid is lower than that of humic acid and protein.The humic acid exists mainly in small molecular weight(10-100 kDa),protein exists in mainly large molecular weight colloids(0.45-1μm).Colloids from AD area are mainly composed of humic acid,and mainly distributed in the molecular weight(10 kDa-0.45μm).The presence of humic acid inhibits effectively the agglomeration of the colloids.Especially,the stability of colloids is closely related to the molecular weight,with low molecular weight from MD area show higher stability.The existence of humic acid in colloids increases the electrostatic repulsion between colloidal particles,which can effectively inhibit the agglomeration of colloids,thus enhancing the stability of colloids.Furthermore,both monovalent and divalent electrolytes enhance colloidal aggregation,and the low-molecular-weight(LMW)colloid fraction exhibits higher stability efficiency than the high-molecular-weight(HMW)colloidal. 展开更多

Meanwhile, it is essential to establish a characterization method for defect analysis to provide sufcient information for process diagnosis and optimization. However, there is still a lack of universal standards for the characterization of defects in SLM parts. In this study, a polarization-based imaging system was proposed, and a set of characterization parameters for SLM defects was established. The contrast, defect contour information, and high refection suppression efect of the SLM part defects were analyzed. Comparative analysis was conducted on defect characterization parameters, including geometric and texture parameters. The experimental results demonstrated the efects of the polarization imaging system and verifed the feasibility of the defect feature extraction and characterization method. The research work provides an efective solution for defect detection and helps to establish a universal standard for defect characterization in additive manufacturing. 展开更多

This study comprehensively characterizes the boundary values of generalized permeability jail in tight reservoirs through relative-permeability curve analysis,numerical simulation,and economic evaluation.A total number of 108 relative-permeability curves of rock samples from tight reservoirs were obtained,and the characteristics of relative-permeability curves were analyzed.The irreducible water saturation(Swi)mainly ranges from 20% to 70%,and the residual gas saturation(Sgr)ranges from 5% to 15% for 55% of the samples.The relative-permeability curves are categorized into six types(Category-Ⅰ to Ⅵ)by analyzing the following characteristics:The relative permeability of gas at Swi,the relative permeability of water at Sgr,and the relative permeability corresponding to the isotonic point.The relative permeability curves were normalized to facilitate numerical simulation and evaluate the impact of different types of curves on production performance.The results of simulation show significant difference in production performance for different types of relative-permeability curves:Category-Ⅰ corresponds to the case with best well performance,whereas Categories-Ⅴ and Ⅵ correspond to the cases with least production volume.The results of economic evaluation show a generalized permeability jail for Categories-Ⅳ,Ⅴ,and Ⅵ,and the permeability jail develops when the relative permeability of gas and water is below 0.06.This study further quantifies the range of micro-pore parameters corresponding to the generalized permeability jail for a tight sandstone reservoir. 展开更多
