文摘[目的]优化黑木耳多糖酶法提取的工艺条件。[方法]采用复合酶法提取木耳多糖,以多糖的提取率为指标,考察了酶解温度、酶解溶液p H、浸提料液比以及酶解时间对黑木耳多糖提取效率的影响,并采用TLC薄层色谱层析法分析提取出的黑木耳多糖的成分。[结果]试验确定了复合酶酶解提取黑木耳多糖的最佳工艺条件:浸提料液比1∶40 g/ml,酶解溶液p H 7.0,酶解温度40℃,酶解时间3.0h。在此条件下,黑木耳多糖的提取率为4.353%,所含有的单糖为D-葡萄糖。[结论]研究可为黑木耳多糖的提取提供参考依据。
