In this study,we isolated starches from non-traditional sources,including quinoa,lentil,arrowhead,gorgon fruit,sorghum,chickpea,proso millet,and purple potato and investigated their morphology,physicochemical,and func...In this study,we isolated starches from non-traditional sources,including quinoa,lentil,arrowhead,gorgon fruit,sorghum,chickpea,proso millet,and purple potato and investigated their morphology,physicochemical,and functional properties.Significant differences in starch particle morphology,swelling power,solubility,syneresis,crystalline pattern,and pasting viscosity were observed among the starches from these nontraditional sources.Further,all these isolated starches had unique properties because of their characteristic distinct granules when seen under scanning electron microscopy(SEM).The amylose content of the isolated starches shown significant difference(P<0.05),and the values ranged between 11.46%and 37.61%.Results demonstrated that the isolated starches contained between 79.82%to 86.56%starch,indicating that the isolated starches had high purity.X-ray diffraction(XRD)patterns of starches isolated from sorghum,proso millet,quinoa,purple potato,and gorgon fruit presented A-type diffraction pattern;while lentil seeds,arrowhead,and chickpea starches presented C-type diffraction pattern.Overall,these results will promote the development of products based on starch isolated from non-traditional starches.展开更多

Th...Rice production generates a significant amount of agricultural waste. This study aimed to give results related to the existence of antioxidant phenols in agricultural waste of selected Northern Thai rice varieties. The antioxidant activities, contents of total flavonoids and phenolic compounds in the ethanolic rice husk extract were evaluated. The highest antioxidant activities were found in the variety PES1CMU, with 2,2’-azinobis-3-ethyl-benzothiazoline-6-sulfonic acid and 2,2-diphenyl-1-picrylhydrazyl as 679.66 and 4.16 mmol/(L·g) trolox equivalent, respectively, ferric reducing antioxidant power as 0.87 mmol/(L·g) Fe2+, total phenolic content as 29.90 mmol/(L·g) gallic acid and total flavonoid content as 12.16 mg/g catechin equivalent. Polyphenol compounds were identified mainly by standard polyphenols using the liquid chromatography mass spectrometry, with the highest contents of phytic acid, o-coumaric acid, naringin and kaempferol. The non-glutenous and wetland ecotypes of rice husk samples were the richest in antioxidant activities and polyphenol contents characterized by using principal component analysis. The glutenous rice husk contained higher antioxidant activities than the rest. Interestingly, quercetin is a significant phenolic compound that positively correlated with the overall antioxidant activities of rice husk. This finding will be relevant for future application of rice husk antioxidant components in the production of functional ingredients as well as for the food and pharmaceutical industries.展开更多

The antioxidant properties were determined by ferric reducing antioxidant power(FRAP), 1,1-diphenyl-2-picrylhydrazyl(DPPH) free radical scavenging, 2,2’-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid)(ABTS) free radical scavenging, and metal chelating ability(MCA) assays, while phenolic profiles were determined by total phenol content(TPC) and total flavonoid content(TFC) colorimetric assays. Total carbohydrate, β-glucan, and melanin contents were determined by colorimetric methods. 5’-Nucleotides, vitamin D_(2), ergosterol, and ergothioneine contents were determined by high performance liquid chromatography(HPLC). Anti-inflammation activities of Jew’s ear were evaluated by the colorimetric protease inhibitory method. The results showed that Jew’s ear mushrooms possessed substantial phenolics and antioxidant properties. All the Jew’s ear varieties contain high amount of total carbohydrate, β-glucan, reducing sugar, melanin, pectin, vitamin D2, ergosterol, and ergothioneine. The consumption of specialty coffees has been growing year after year, indicating that several niches and market forms according to the sensorial orientation of the consumers, as well as the cupping tasters and agents...The consumption of specialty coffees has been growing year after year, indicating that several niches and market forms according to the sensorial orientation of the consumers, as well as the cupping tasters and agents are responsible for the composition of blends, and for the physical and sensory classification of the coffees in the industry. This study presented 5 methods of spontaneous and induced fermentation to different North American cupping tasters, in order to evaluate coffee quality potential, based on the Specialty Coffee Association (SCA) protocol. During the months of May to July of 2017, 150 coffee samples were evaluated. Initial results indicate that North American cupping tasters evaluated dry fermented coffees using yeast culture as superiors, in the sensorial aspect, than the more conventional methods in Brazil. Such indication opens new discussions on the acceptance of a determined product, followed by the potential for modification of the sensory route as of the fermentation that will affect the attributes.展开更多
Exposure to environmental cadmium increases the health risk of residents.Early urine metabolic detection using high-resolution mass spectrometry and machine learning algorithms would be advantageous to predict the adv...Exposure to environmental cadmium increases the health risk of residents.Early urine metabolic detection using high-resolution mass spectrometry and machine learning algorithms would be advantageous to predict the adverse health effects.Here,we conducted machine learning approaches to screen potential biomarkers under cadmium exposure in 403 urine samples.In positive and negative ionization mode,4207 and 3558 features were extracted,respectively.We compared seven machine learning algorithms and found that the extreme gradient boosting(XGBoost)and random forest(RF)classifiers showed better accuracy and predictive performance than others.Following 5-fold cross-validation,the value of area under curve(AUC)was both 0.93 for positive and negative ionization modes in XGBoost classifier.In the RF classifier,AUC were 0.80 and 0.84 for positive and negative ionization modes,respectively.We then identified a biomarker panel based on XGBoost and RF classifiers.The incorporation of machine learning models into urine analysis using high-resolution mass spectrometry could allow a convenient assessment of cadmium exposure.展开更多

文摘Exposure to environmental cadmium increases the health risk of residents.Early urine metabolic detection using high-resolution mass spectrometry and machine learning algorithms would be advantageous to predict the adverse health effects.Here,we conducted machine learning approaches to screen potential biomarkers under cadmium exposure in 403 urine samples.In positive and negative ionization mode,4207 and 3558 features were extracted,respectively.We compared seven machine learning algorithms and found that the extreme gradient boosting(XGBoost)and random forest(RF)classifiers showed better accuracy and predictive performance than others.Following 5-fold cross-validation,the value of area under curve(AUC)was both 0.93 for positive and negative ionization modes in XGBoost classifier.In the RF classifier,AUC were 0.80 and 0.84 for positive and negative ionization modes,respectively.We then identified a biomarker panel based on XGBoost and RF classifiers.The incorporation of machine learning models into urine analysis using high-resolution mass spectrometry could allow a convenient assessment of cadmium exposure.
